Robbi's M&M's® Cookies

I've made these a number of times now and they are always a hit! I use half butter and half regular shortening and think this provides for a perfect texture. They are a pretty cookie on an assorted plate, with the colorful candies peeking out. Would be fun with any of the holiday/seasonal colored candies, too.

Chili-Lime Chicken Kabobs

Quick and easy and very tasty. We've had it with the chicken threaded onto skewers as the recipe calls for, as kebobs and just marinated chicken breasts grilled. I usually try and marinate the chicken for 2-3 hours, but is still good if you have less time.

Disappearing Marshmallow Brownies

The teens I made these for proclaimed them "the best thing they had ever eaten". I thought they were quite good, too, though very sweet. They were quick and easy and would be very nice on an assorted cookie/bar plate.

Caramel Pretzel Nut Popcorn

Beware! This is extremely delicious and highly addictive. I made it for a group of older elemtary age children and young teens and they loved it! I bet it would be even better made with mixed nuts or a blend of almonds and cashews. I plan to make it to put in some holiday containers at Christmas time.

Black Bean Tortilla Casserole

This went together very quickly and was delicious. My husband (who is not a big fan of casseroles in general) loved it and ate 2 big helpings. I used colored peppers (red, orange and yellow) instead of green as we prefer the milder taste, and sauteed the peppers and onions a couple minutes before adding the rest of the ingredients. I used flour tortillas, since that is what I had on hand, but think it would be good with either flour or corn. I also added some sliced black olives to the casserole on each layer before baking and that added a very nice taste, we thought. Quick, easy and very tasty....can't get much better than that!

Peanut Butter Cup Cookies

These are amazing and did not last long once the staff at work got hold of them. The only change I made to the recipe was to add an additional 1/4 cup of flour, because my dough was a little too sticky to easily handle. Be careful not to overbake....they are only light brown aroudn edges when they are done. A keeper for the holidays (or anytime!)

Pecan Pie Bars I

This is a great recipe and a nice alternative to pecan pie. Very rich, with a buttery crust. I also used half brown sugar in the filling and that worked great. I noted another reviewer's comment about a longer baking time, though my time was not quite as long. It might have to do with actual oven temp, so I'd say check at 25 minutes and then every few minutes after that..otherwise it could quickly get overdone. Mine took about 35 minutes and it was perfectly done.

Russian Tea Cakes I

These are one of my family's favorite holiday cookies and I have used the Betty Crocker recipe for years. I thought that was good, but this one is even better! I have made several batches and the dough has been beautiful to work with every time. One time I was even halving the recipe, but had a brain block and added flour for the full recipe. So I threw in the rest of the butter, vanilla and powdered sugar and it still turned out as good as ever. What a forgiving recipe! I highly recommend this one.
