Jalapeno Popper Spread

Very good. I could only find a 12 oz. jar of chopped jalepenos, so I had to eyeball the amount. It turned out pretty spicy, but thats OK-we likey de spicey! Thanks for sharing this recipe. I have already been asked to make it again.

Cheezy Chicken Spaghetti Bake

Not exactly an accurate review, since I did make quite a few changes. Mixed one jar cheddar cheese pasta sauce, one can cream of chicken soup, chopped spinach, roasted red peppers + 1 TB juice, 1 can petite diced tomatoes, oregano, basil, garlic powder, parmesan cheese. Added cubed cooked chicken. Tossed with whole wheat pasta. Transferred to 9x13 baking dish and topped with shredded cheddar cheese. Delicious. This recipe can easily be modified to taste or ingredients on hand. Family loved it.

Spinach and Potato Frittata

Wonderful! Made a few changes: used 2 cans diced potatoes, drained (because I was feeling lazy), added extra (baby)spinach, skipped the green onions because I was out, used swiss instead of cheddar, and added roasted red peppers because I find any excuse to use them. Turned out beautifully. Started on the oven and finished in 400 degree oven as others suggested. This will definetly go into regular weekend rotation.

Very good. Used the cooling rack method others had recommended. Cooked for 15 min. Broiled for 2 min. Crunchy outside, moist inside. My 3yr didnt even need the ketsup! Thanks for sharing.

Baked Honey Mustard Chicken

Sauce was delicious. My chicken turned out slightly dry, but I used chicken tenderloins instead of breasts, because that is what I had. I think I should have cut cooking time a little. Thanks for sharing this yummy recipe.

Broiled Scallops

I love scallops, but have always been afraid to cook them myself. Finally decided to give it a go...WOW! Other than a sprinkle of Old Bay followed the recipe to a T and they turned out perfect! Thanks for sharing.

Pleasant Pork Chops

I was never a big fan of pork chops-until I found this recipe. Yum! I did use thin cut chops-so they were ready in 15 minutes and substituted Cajun Seasoning for the paprika. I just tweeked with the sauce until it reached our desired consistancy. Thanks for sharing such a tasty recipe. My husband is already asking when we will have it again.
