Holiday Chicken Salad

I made this for, a ladies' night and everyone really enjoyed it! I substituted chopped granny smith apples for the celery and added dashes of curry, poultry seasoning, and garlic powder. I toasted the pecans (cook at 350 for 5 minutes). I omitted the bell pepper, and reduced green onion to 1 only. I also used slightly less than a cup of pecans, as I just thought less might be better. Give this recipe a try and tweak away! My guests really liked the flavor of the curry.

Easy Valentine Sandwich Cookies

I made this recipe today for Valentine's Day tomorrow. I like to make little treats for my husband to take to his co-workers. For a surprise, I used raspberry jalapeno jelly on the inside of the cookie sandwich! The outside I iced with a simple powdered sugar and milk icing. I found 8 minutes to be the perfect baking time for me. I stuck the dough in the freezer for a short wait on getting started with rolling and cutting. Per another user's advice, I rolled the cookies with powdered sugar instead of flour--unless you like extra sweet cookies, I'd recommend using the flour instead. A tasty cookie! Didn't have trouble with it running while baking :)

Greek Penne and Chicken

I've been making this for my family the past few years, we like it because it has such a different taste than our other meals, the lemon and feta are really great! Changes made: used 12 oz pkg of penne pasta (still has more pasta than other ingredients), cut chicken into small bite-sized pieces (so they mix in with other ingredients better), instead of a tomato I used a can of diced tomatoes, I added 1/2 the feta while mixing, and 1/2 on top before serving, I also added 1/4 cup green olives.

Green Tea Mint Cookies

Made these for St. Patrick's Day and I noticed the batter was more yellow than green, so I added food coloring. I was also timid about the amount of mint extract called for, so I used only 1/4 tsp. It has a nice hint of mint this way, but I think I'd try at least 1/2 tsp next time. I toyed with the idea of adding sugar like another reviewer suggested, but in the end I left the recipe as-is, and instead melted white chocolate chips and drizzled on top to sweeten. The cookie is basically a shortbread cookie, and it is NOT very sweet, so if you want it to be, definitely try adding some sugar in addition to the honey. Fun recipe! Thanks for adding!

Orange-Chip Cranberry Bread

Made this into muffins, baked 18 minutes. I used one cup wheat flour and 1 1/2 cups of white. I did not make the glaze, but added 2 tablespoons of orange juice into the muffins as another reviewer suggested (to up the orange flavor). I loved how it turned out, my husband was'nt crazy about the orange and chocolate combo. May try again with just orange and cranberries (I loved the chocolate chips!).

Perfect Lemon Curd

Did not use lemon zest, just the juice. Turned out sweeter/more buttery than I had imagined. Next time I will add zest and cut down on the butter to get more of a gel than a cream. Husband loved it, we served it on scones and bread.

Apple Sweet Potato Bake

I made this Christmas day for a large family dinner. Everyone who tried it loved it! Some were hesitant to try the apple portions but ate the sweet potatoes. Next time I think I'll make a crumble topping, the casserole isn't the prettiest thing, then the sceptics might give it a fair shot!

English Royalty Chocolate Chip Scones

These were just ok for my husband and I. I did use lemon curd on them and loved it. Added 8 T of butter and oj, but was still very dry and as a result I over mixed, making scones a bit tough. Not the best scone I've ever eaten.

Big Soft Ginger Cookies

Could not get mine big and soft, not sure if that's because I use butter instead of margarine? I always seem to have this problem. Recipe was good, but no comments from my husband's co-workers. Just ok I guess!

Supreme Strawberry Topping

Ended up having to blend this, mashing didn't get the strawberries fine enough. Great sauce, I topped "Chantal's cheesecake" with this sauce, and some ice cream. Only thing I might try next time is to reduce the vanilla, the taste was too strong for me. Maybe even worth trying an orange extra extract instead??

Mimi's Giant Whole-Wheat Banana-Strawberry Muffins

Nutritious, moist and tasty! I used only 2 bananas and added 1/2 Cup oats. Cut back on cinnamon to 1/2 Tablespoon, added 1/4 nutmeg as others had suggested. I mashed the strawberries as some reviewers complained about sliced strawberries' sogginess. My applesauce was strawberry flavored. Added streusel topping from "Strawberry Streusel Muffins" recipe on this site. Nice moist muffins, the husband and toddler ate them up! Good with butter but doesn't really need it (unless you're a butter fiend like myself ;)

Chantal's New York Cheesecake

Great consistency. Mine cracked up, but I swirled in two bars of melted semi-sweet chocolate, so maybe that's why. I tried the water bath beneath the cheesecake (my cheesecake pan drips). Having said all this, the cheesecake lacked something for me. I enjoy that tart taste (lemon juice?) in a cheesecake and this didn't have it. A great recipe though.

Cola Pork Chops

I used Dr Pepper, our favorite soft drink. I only used 1 1b. of pork chops so I ended up with a lot of extra sauce. This tasted pretty good, will try to make again.

Key Lime Pie VII

Wow, this took a lot of time to make!! Just be warned. I followed previous suggestions and used a garlic press to squeeze the key limes. The consistency was great on the pie. The flavor was too strong! I love lime, but I think the juice + the tablespoon of rind was too much. Some bites of the pie were down right bitter! My brother said eating his whole piece was like a dare. So, would try again minus the rind. I give this 4 stars since everything else was great and maybe it would be perfect without the rind.

Hot Turkey Salad Sandwiches

Jay's Signature Pizza Crust

Really good recipe. Only complaint is how messy the adding flower part is. Maybe more specific directions on how much is needed would help, but I guess that varies. Crust tastes great. almost as good as delivery pizza.

Whole Wheat Banana Bread

Made some substitutions out of necessity. I only had 1 naval orange so I added in a 3rd medium banana. I also subbed in olive oil. Good muffins, I like that it had some wheat flour with the white. Nice texture, not too dense! There's was a hint of orange flavor with just adding 1, I'm not sure how 4 oranges would work.
