Peanutty Carrots

This was delicious but I made a few changes. I mixed peanut butter, chopped walnuts, soy sauce, rice vinegar, and a few pinches of sugar. I added this peanut sauce to the steamed carrots. My boyfriend loathes carrots and we both thought this dish was amazing!

Spinach Quiche

I made my own crust from a recipe on this site called "Never fail pie crust." This Quiche turned out incredibly well! My best yet! I also sauteed tomato and broccoli with the onion and spinach. mmm will definitely make again!

Butternut Squash and Sweet Potato Soup

Delicious! The tofu is hidden! I used soft tofu and omitted the chilli. Mmm I will definitely make this again. Thanks for the great recipe :)

Hungarian Mushroom Soup

AMAZING. This is the best soup. The only substitution that I made was using vegetable broth instead of chicken broth. My boyfriend and I absolutely loved it! Thanks for sharing the great recipe :)

Garden Stuffed Baked Potatoes

These were delicious! I made a few alterations. I didn't have any broccoli so I used spinach (I boiled i and then mixed it with the potato, onions, ranch and ADDED some light sour cream). mmmm Everyone loved these and it saved time using the microwave and then a quick bake!! Will definitely make again!

No Fry Crab Rangoon

These were delicious! I placed them in muffin trays and cooked them for 10 min at 350 and then broiled for 5 min. It made them nice and crispy. I also folded mine in a wonton style and used light cream cheese and added green onions instead of reg. Mmmm hit at the party!

Asparagus and Goat Cheese Quesadillas

I altered this recipe but it was DELICIOUS! I used goat cheese, but I added avocado, sauteed mushrooms, tomatoes, yellow peppers and onions and omitted the asparagus (didnt have any). I also topped it with a little bit of mozza cheese. OH MY Yummy! Will definitely make this again!

Smoked Salmon Frittata

Delicious!!! I made a few changes- I omitted the olives and used a mixture of mozza and cheddar chunks instead of cream cheese. I also used regular frozen salmon and skipped on the cream, using more milk instead. mmmm Will definitely make again and again!

Slow Cooker Beef Stew IV

I used this recipe as a guide and made many alterations. Instead of carrots I used orange and yellow peppers. I also added canned beans, broccoli and wilted spinach. I used veg. ground round instead of beef. I also added vegetable stock, 1 small can of tomato paste and garlic. The red wine was a wonderful touch...I used 1 cup red wine and 1/2 cup boiling water. These recipes are great since you can add anything and rarely fail! It was delicious!!

Stuffed Peppers

Yum! I substituted white rice for brown rice and I replaced the ground beef with veggie ground round. I also used one can of tomato soup and 1/2 the sauce. This was a great dinner!

Tasty Fried Eggplant Balls

Delicious! I replaced the green pepper with chopped mushrooms and I omitted the egg and just dipped them in flour. I also fried them in olive oil. I served them with veggies and sweet potato fries, but they are filling enough on their own! Yummm!

Roasted Brussels Sprouts

This turned out really really good. I used a salt substitute to lower the sodium content. I finished them with a light thai dressing! mmmm Definitely need to parboil them before hand to soften them up.

Swiss Spinach Casserole

I didn't have pimentos, green onion or water chestnuts, so I used onion, and celery. This dish turned out amazing!! The nutmeg was a nice touch. I also used frozen spinach and baked it until the cheese browned. I'll definitely make this again! Thanks!

Birds Eye® Fillet of Sole Florentine

This was very yummy and it looked so gourmet! I used thawed out frozen sole and I replaced the bread crumbs with rice. I also baked it with a tomato herb alfredo sauce. DELICIOUS!

Dill Poached Salmon

I mainly used this recipe to see how to poach!! It turned out SO juicy and delicious!! I coated it with blackened spices, very tastey!! I also used vegetable stock and water to boil the fish. Yummy!

Breaded, Fried, Softly Spiced Tofu

This was delicious! I made a bunch of changes though. I ommited the yeast and didn't have any sage. I used extra cayenne pepper, with some basil and lemon pepper. I also didnt have veg. broth so I dipped them in egg whites and then the flour mix. IMPORTANT: It's extremely helpful to bake the tofu before coating and frying it. This makes it stay together and have a MUCH better texture. Definitely a keeper!!
