Mimi's Giant Whole-Wheat Banana-Strawberry Muffins

Followed the directions to the letter and these turned out great! I was worried that they'ed be dry because of the whole wheat (normally I use half wheat half white flour) but these were just perfect. Moist and flavorful--I just can't say enough good things about this recipe.

Coconut Pecan Chicken

This was a favorite with everyone in my house. After reading the reviews that the chicken needed a bit more of a kick, I added 1/4 tsp. curry (since it goes so well with coconut), a dash of red pepper and a little garlic to my chopper while everything was grinding. I also kept my chicken breasts whole and double dipped them in the coating so they'd be nice and crunchy and cooked them on a rack on a baking sheet so I wouldn't have to flip them. Even the people that don't like coconut liked this one--I gound everything so finely they could only taste the sweetness of the nuts without the texture that they don't like. After my alterations it is 5 stars all the way.

Banana Oatmeal Crumb Cake

This was a wonderful recipe. I used vegetable oil instead of butter because, for me, it makes for a more moist cake. That was really the only change I made, other than taking the user suggestion of adding 1 Tbls. of flour to the topping mixture. Like others, I made these into muffins (cooked for about 29 minutes) instead of a single cake. The flavor was great and they were moist and very banana-y. I had a ton of topping--almost, but not quite, too much and it stayed on my muffins just fine. This recipe might replace plain ole' banana bread in my house!

An excellent addition to any Christmas Breakfast. This is a prefect recipe but does, as has been mentioned previously, need to bake a bit longer to get cooked all the way through.

Granny's Squash Casserole

This recipe has become a staple of my Thanksgiving menu since finding it a couple of years ago. Something that might help with the "runny" issue that some have commented on is making sure that your squash is well drained. I cut my squash in half lengthwise, scoop out the seeds and then slice into chunks. Those pieces are then cooked according to the directions and drained in a colander with a plate or bowl on top to press out excess moisture. The core of the squash tends to hold a lot of water and, in my opinion, the seeds have a bitter taste. Also, adding a beaten egg to the sour cream/soup mixture helps the whole dish to set up. Instead of putting melted butter into the dish, I save it for drizzling over the Italian dressing seasoning (that I mix with about a half cup of Italian breadcrumbs). This combo makes a nicely browned, crusty topping that is a nice contrast to the creaminess of the rest of the dish. I've also been known to use sauteed bell peppers (any color) if I'm out of pimentoes.

Monkey Bread

This was a fun Sunday morning breakfast. I only had instant butterscotch pudding so that's what I used. This was my first Monkey Bread, so I don't know what kind of difference the cook and serve pudding makes--gooeyier, perhaps? Well, these were nice and sticky and everyone loved them. I did run out of the dry mixture with a few biscuit pieces left, so next time I'm either adding more sugar or I'll go easier on that step. I also think that on my next batch I might just use one or two rolls of biscuits and, instead of using a bundt pan, use a muffin pan. Will definitely make again!

Honey-Peanut Butter Cookies

These cookies turned out sooooo good! The only changes I made were using brown sugar instead of white and I added a splash of vanilla because I find it to be a great addition to almost any cookie. I also used a drinking glass dipped in sugar to flatten the cookies. It makes all the cookies the same size and shape, and the sugar coating makes the cookies nice and crisp on top. This recipe made 4 dozen BIG crispy on the edges - chewy in the middle cookies. I'm adding this one to my collection.

Chocolate Sauce

It is wonderful to be able to make "Chocolate Syrup" with everyday pantry items. This is a perfect sauce and so easy, too. One hint -- prepare in a skillet, it comes to a boil faster.

Creamy Peanut Butter Fudge

This was a good tasting fudge--but I'm giving it three stars because I've made much better tasting peanut butter fudge from a more simple recipe. For starters the listed times are way off. It takes a lot longer than 10 minutes to make and isn't ready in 50 minutes, as listed. For me it took almost a half an hour to even come to a boil. I boiled it for about 8 minutes but it was still a teensy bit grainy and it probably needed a couple more minutes of boiling time. Also, it never really set up as firm as I like. It was still a bit too soft for my tastes even after sitting in the fridge overnight. Don't get me wrong, anything with 5 cups of sugar, peanut butter and butter in it is bound to taste good, and this did taste good--there are just better Peanut Butter Fudge recipes out there.

Easiest Peanut Butter Fudge

This is the Very Best Peanut Butter Fudge. It's creamy and smooth and very rich. I've found that other PBF recipes that rely more heavily on confectioner's sugar and less on brown sugar are a bit dry and grainy. I prefer this fudge to even chocolate fudge. Perfect!

Herald's Impossibly Easy Cheeseburger Pie

This was a very popular dinner in my house last night! The only change I made was using a can of drained, diced Italian style tomatoes mixed into the ground beef/onion mixture instead of using a fresh sliced tomato. I also added a little crumbled bacon on top, with the cheese, to make it Bacon CheeseBurger Pie. People wanted seconds and so I'm adding this one to my recipe collection.

Chicken 'N' Chilies Casserole

Sorry, this didn't work out well in my house. It was bland and dry and I wound up throwing a good portion of it away. Also--a 2 pound package of hash browns are WAY too many for this dish. Is this a typo?

Creamy Beef Stroganoff

This was a great quick and easy meal! I followed the directions exactly, except I added some diced onion to the ground beef while it was cooking and I added a jar of mushrooms when I added the soups. Everyone liked it. Delish!

Salisbury Steak

This was a hit with my whole family! I followed the recipe exactly, except that I doubled the sauce so we'd have plenty of gravy for the rice I was serving with it. The 1 1/2 pounds of meat made six very large patties and next time I'll probably just use our standard 1 lb. of meat for 4 patties. Also, next time, I'm going to use about half has much ketchup as this was a little bit tomato-y for my taste. The rest of the family raved about it and I've put this recipe in my 'keep' pile.
