Hamburger, Potato, and Kidney Bean Casserole

I thought this was dull, and so did my husband. Even after I added a jalapeno to the ground turkey (I substituted) and spiced it up, it still didn't do it for me. Perhaps I would give it another star if the potatoes had some zip.

Blackened Chicken

Would have been five stars but it took a lot longer to cook than 5 minutes in the oven. Great though, I will make again. Served with a side of broccoli and roasted corn.

Fiery Fish Tacos with Crunchy Corn Salsa

I give it 4.5 really--the fish, although I love spicy, could have had some extra spices blended in to give it some extra dimension. I would add a blend of cumin, coriander with some chili pepper instead of so much cayenne. My guests thought it was too spicy but loved the salsa. I will make again with above changes.

Greek Chicken Pasta

This recipe will be five stars when I make it next time. I will add another tomato and some chopped kalamata olives to give it extra tang, color and texture. I added some crushed red pepper and fresh oregano with the parsley, and it was so good that I look forward to making it again with the aforementioned changes.

Stuffed Peppers with Turkey and Vegetables

This was delicious. I only used one tablespoon of olive oil, though, and it worked out great. I also cooked the peppers about 25 minutes initially, instead of 15 because I like the skin to be more "well-done."

Slow Cooker Spinach Marinara Sauce

Terrific. Four hours was a bit too long on high for my crock pot, so I will cook it a little less next time, but the taste was amazing. I served this over gnocchi, and it was a hit with my Sicilian husband.

Sauerkraut and Tomato Stew

I liked this a lot! I used low fat turkey sausage and some extra spices to heat things up a bit; I also covered the dish when it looked like the rice wasn't going to be done according to the time in the directions. It was still not quite done perfectly, so I will cook a little longer next time. The last thing I did was add a little brown sugar to mellow the tanginess a bit.

Slow Cooker Chicken and Dumplings

I loved this recipe--with a certain number of changes that I picked out from reading the numerous reviews. I like spice in my food, so I smothered my chicken in a combination of poultry seasoning, cumin,and a spicy custom blend. I used two cans of HEALTHY CHOICE condensed cream of chicken, light butter, and a sweet onion. Then I covered the mixture with chicken broth and let it all cook. At 90 minutes before serving, I shredded the chicken and then added one 16.5 oz can of (torn up) Grands Biscuit Dough. I think it was the perfect amount. I sprinkled paprika on the top. I know that many people incorporated vegetables in this recipe, but that is not traditional. Why not just serve veggies on the side?? Bottom line; true comfort food for a chilly fall night!

Slow Cooker Taco Soup

Terrific! I realized when I was making the soup that I had only half a pound of ground turkey. I used that, and then I put in about a half pound of chopped turkey bacon. I used 1 14 oz can of tomato sauce (no water) and two cans of Rotel (for the extra chilis). I added cumin, a tablespoon of brown sugar, and at the very end some fresh cilantro. Sprinkled the top with some shredded cheese, and my husband said I should make it every week.....

Maple Corn Bread

Spicy Chipotle Turkey Burgers

With changes, this was an amazing burger recipe. I like really spicy flavoring, so I added 3 chilis in adobo instead of one. I also thought maybe the burger would be a little dry, so I took 2 chilis in adobo, some mild green chilis and some light mayo and mixed them up for a "special sauce" that blended perfectly with the flavor of the burger. Maybe over the top for some, but I also used pepperjack instead of mozzarella. My husband LOVED it.

Tandoori Chicken II
