Extra Easy Hummus

This was an excellent basic recipe. It has more of a dip consistency, and isn't as creamy as sesame based hummus, but all the same, I found it to be delicious. I added 1 tsp greek seasoning, lemon juice, white pepper, extra garlic and 1/4 roasted red pepper. I also added a few drops of sesame oil which it could have went without.

Mac and Cheese II

The overall flavor of the mac and cheese was good, however I found it to be quite dry upon baking. I would have enjoyed it better prior to baking. I added some extra seasonings such as onion powder, black pepper, and salt. I also used Mexican cheese and Kraft and velveeta singles to make the sauce since I did not have the velveeta block.

Chunky Potato Soup

This was one of the best soups I have ever made! I did make some changes. I added 2 pieces of American cheese, seasoned with onion powder, nutmeg, celery salt, fresh chives, and garlic (3 cloves) and used half-and-half and skim milk. I made two batches of the cream and cheese mixture to make the soup extra thick. I also used baby redskins (yellow flesh) and russet potatoes. Excellent, will make again!

Fattoush

This salad was exceptional! I made last night for a light dinner, and was blown away by the results. My Dad, who is a very picky eater and not very "experimental" when it comes to cuisine, absolutely loved it. The dressing was light, flavorful, and balanced. Surprisingly, the mint did not overpower the salad, and the various flavors blended together in perfect harmony. I added sweet onion because I LOVE onion in salad, and some chick peas for fiber and protein. We also topped our plates with a few sprinkles of feta, and I left out the pitas to make it healthier. WILL be a new staple weekend meal for my family. The preparation is time consuming, but WELL worth the wait!

Pizza Dough I

This was my first time ever making homemade pizza. (I made the sauce and dough). The recipe was super easy. The only change I had to make was to add more water because dough was too hard and not mixing properly. THIS makes a really thick crust, almost Chicago-style, so beware.

Warm Mushroom Spread

This spread was oh-so good! It was also extremely quick and easy to prepare. I added some herbs( Thyme, rosemary, Italian seasoning, onion powder, garlic powder, and white pepper) just to give it a more elegant feel. This was one of the best appetizers I have ever tasted. WILL be making when I entertain next.

Delicious Black Bean Burritos

all around great burrito! The recipe is so versatile too. I added my own fajita seasoning and cumin to the onions, peppers, and beans. I also used seasoned black beans to begin with. I omitted the jalapeno, because I do not care for spicy foods. I also left out the cilantro because I didn't have any on hand

Cauliflower-Cheese Soup

This is such an excellent, easy, and versatile soup! I made a few changes. I used one can of chicken broth to cook the veggies in + 1/2 can water. I sauteed the onions in butter with thyme, garlic powder, salt, white pepper, and onion powder. Instead of using milk, I used half and half and a little bit of heavy cream. I did not measure out exactly three cups. I added nutmeg, onion powder, salt, pepper, and Velveeta, 1/2 slice of swiss cheese, and shredded Mexican cheese to the Roux. Great basic recipe, I just prefer more spices. will definitely make again!

French Onion Soup Gratinee

This soup is the real deal! There are so many flavors colliding at once on the palate. sweet, salty, savory! I made a few minor changes based on not having ingredients on hand. I used 2 cooking onions in place of the red because I did not have any red onion and added a hint of sugar while sauteing to help caramelize and sweeten. All I had was beef stock, so I used 1/2 of a carton which filled a 14.5 oz chicken broth can, and another 1/3 of a can after that. I used only two cans chicken broth as well. As far as seasonings go, I used 1/2 tbsp Worcestershire sauce, 1/3 cup red wine, 1/2 tbsp balsamic vinegar, and kept herb amounts the same. I made my own homemade garlic crouton and melted Swiss and mozzarella on top in the oven. Did not have any fancy bread on hand. Next time will be sure to use red onions. I can imagine what it does for the flavor of this soup

Fabulous Roasted Cauliflower Soup

I tweaked the recipe a bit. Added a large whole carrot and some diced red onion to roasting pan. Roasted 30 minutes as indicated. I sauteed some sweet onion (about 1/3 of a large onion) in olive oil and butter, and added cauliflower, shallots, carrots and red onion to the pot. Used fresh thyme because I had it on hand in my garden (yes in December in MICHIGAN my Thyme plant is still alive!) Used 2 cups chicken broth and 1/2 cup water. Added a dash of nutmeg. I made a roue instead of fooling with a food processor, and mashed the cauliflower with a potato masher (just as I do when I make cream of broccoli). Very versatile soup, and loved the creamy flavor!

Conchi's Sangria

This was a hit at a Wedding Shower I hosted. My cousin (the bride-to-be) said it was her favorite. I scaled down the recipe to only serve 25 people. I also used diet 7up instead of regular to cut down on the sweetness and calories. Definitely will make again and will not change a thing as far as ingredients go. Thanks for this recipe!

Caley's Classic Zucchini Bread

I made this recipe yesterday to try and use up the zucchini from my garden. The flavor is excellent, but thought the bread itself was a bit dry. This could be because I baked on convection bake instead of regular bake. Next time I will not use convection bake and see how it turns out

Maple Dill Carrots

I had a lot of homegrown carrots that I needed to use, and I printed out this recipe over a year ago, and never tried it before. I am so glad I did! The flavor was perfect! I made no changes to the recipe except dried dill instead of fresh. Thank you for the delicious recipe!

Tomato-Cream Sauce for Pasta

I really enjoyed making this recipe and it turned out wonderful. Instead of canned tomatoes, I used fresh Romas from my garden and also fresh basil and oregano as well as dried. I added garlic powder, onion powder, and used half and half because I didn't have any cream. WILL make again and again! Thanks!

Lentil Soup

I made this soup yesterday on a cold and snowy Michigan day, and it immediately filled my home with a rich and aromatic aroma. The soup itself is so hearty and filling, and has a wonderful flavor. I made some minor changes to the recipe. I added chicken stock and beef stock to the recipe, along with water. I also increased the garlic to 5 cloves (my family loves garlic), added two fresh vine-ripened tomatoes and one 14.5 ounce can of unseasoned diced tomatoes. I increased the bay leaves to two, added extra carrots and celery, and added baby spinach by hand, probably over a 1/2 cup. I would definitely make this recipe again.

Fettuccine with Sweet Pepper-Cayenne Sauce

I made this a couple days ago, and it was a hit. I only used 1/3 tsp cayenne, added crushed red pepper,onions ,and more garlic. I also used mozzarella and Parmesan cheeses, and I only had one red pepper, so used one orange, one red. next time I will add more peppers. The flavor was exceptional, very restaurant quality. would definitely make again.

Arrabbiata Sauce

I made this sauce with tiny tube pasta, and it was a hit with my boyfriend who loves spicy foods. My family found it too spicy for their taste, but i think the sauce was delicious. we ate at an Italian restaurant last night, and the sauce we got with out bread tasted just like this sauce according to my bf. Will def use this recipe again, thank you
