The Best Garlic Bread

I read many different recipes and I am reviewing this one since I used this one as a base and went from there. I used softened butter and spread on bread first then combined mayo, 3 garlic cloves, parm cheese, oregano and salt to taste. Strong garlic flavor, you can use 2 cloves if you dont like it so strong. The bread was very tasty and I would make this again. My kids said this was they way they always want garlic bread.

Spinach Tomato Tortellini

My entire family loved this meal. They are picky eaters and Im always trying to find recipes that "hide" veggies and taste good, this was perfect for the spinach. I added grilled chicken and used fresh garlic, parm cheese, and onion. **Update 11-07-07** I needed a fast recipe so I made this again, but didn't have spinach and I used barilli 3 cheese tortellini. It was still very good and tasty. It did lose a little something without the spinach but still good. Last time I used regular pasta and I think a cheese tortellini was much better.

Old Fashioned Onion Rings

4 stars for taste but 3 stars for the work involved. I added a bit of garlic and extra salt for more flavor. There wasn't one ring left, my family really enjoyed these and are requesting them already. However, I dont know if I did something wrong but when frying I lost some of the batter/breading on the rings. I drained the batter on racks and then coated rings in a covered container to help speed up the tedious process of coating the bread crumbs so that may have been the problem. I did shake off excess fairly well. Maybe I drained the onions too well first?? I am willing to make these again when I have plenty of time free.

Italian Subs - Restaurant Style

EXCELLENT! If you like true italian tasting sub sandwiches, this recipe is it. I used all the meats called for in this recipe for authentic italian taste. My only change was romaine lettuce chopped instead of the red leaf as that is what I had on hand. I also broiled the sandwich slightly with the cheese before adding the dressing/lettuce. The dressing was very tasty! My kids dont care for the capacola so the 2nd time I made them I left it off of theirs and they like it better that way. This is a keeper!

Red Skinned Potato Salad

Very flavorfull, the bacon makes this dish excellent. I will keep this recipe as my main potato salad. The bacon stayed crisp for quite a long time, but make sure its extra crispy when you cook it (not burnt) I used thick sliced bacon. My only change was scallions in place of onions.

Ninety Minute Cinnamon Rolls

Excellent quick and easy recipe. If you want a quick cinnamon roll recipe this is perfect. It was 90 minutes start to finish and the only thing I did add was a cream cheese frosting when finished. I preferred it without the frosting but my kids have more of a sweet tooth than me. I also used butter in place of margarine.

Caramel Shortbread Squares

I followed recipe exactly, except for doubling it and making it in a 9x13 pan. I was skeptical after reading reviews that it wasn't going to turn out since some had problems with the carmael layer and it wasn't clear about the layering if it should be cooled or not. The caramel layer was nice and firm yet still soft enough. I did cook slower on a lower heat and stirred constantly and then checked with the water method. I chilled each layer before adding the next and also before cutting. I was quite pleased with the look and overall balance of shortbread to sweetness of this dessert. I took it to a party that night and everyone really enjoyed them. I highly recommend them.

Apple Toast

This was a nice simple treat. I tried it out for myself before making it for my kids. I had it for breakfast and it makes a nice change for the morning. I used less butter and had a cinnamon/sugar mix already made up so I used that.

Bacon and Tomato Cups

I usually do not like to rate recipes when I alter the original too much. I made a lot of changes and my rating of 4 stars reflects this. I used phyllo cups to start and I used half the mayo called for, 1/4c ranch and 1 can of rotel. I like these and I felt that this way was less time consuming to make these quickly. I do find rotel a bit on the spicy side, but Im wimpy when it comes to heat LOL. I had many compliments on them and most did not find them too hot at all, they thought it was just enough spice/heat to know its there but not overpowering. I am definitely going to make these again for another party and try it with regular tomatoes instead of rotel.

Marinated Grilled Shrimp

Excellent!! I didn't change a thing and I loved this marinade/recipe!! My 4 kids all loved it and one had never had shrimp before. They all want me to make it again. Thanks for the great recipe.

Banana Crumb Muffins

I am giving this 4 stars. These were good, but the greatest to die for muffins that I would give 5 stars for. They were a bit on the too sweet side for my tastes but my kids didn't mind ;) I really like the topping it gave it a nice texture. I used mini muffin trays to bake mine.

Glazed Apple Cream Pie

Excellent!! This recipe will be my regular apple pie recipe. This was my first time trying a cream type apple pie and I now prefer it over the traditional version. I used 2 granny smith and 2 honecrisp apples. Otherwise all other ingredients remained the same.

Zesty Tuna Salad

I grew up eating tuna sandwiches with pickle and onion, sometimes we would switch the pickle for celery. I really liked adding the dijon mustard, it gave it a nice twist flavor. I didn't have relish since I dont like it, so I chopped up dill pickles to replace it. I will eat this for lunch often.

Apple Turnovers

I wish I would of made a double recipe. My kids ate them up way too fast. I did end up cutting them in half after they were baked to get two smaller sized pastries instead of the big size. I tried to make them smaller to start but they were too hard to get enough apples in and seal. I chopped my apples in smaller chunks so I didn't have to worry so much about the dough ripping. They did leak, but didn't affect them any. I did use the glaze but for me it was too much (sweet) and I prefer it without. My kids didn't mind ;) Overall 4 stars and a keeper quick dessert recipe.

Sauteed Garlic Asparagus

easy and tasty way to prepare asparagus. I like the change from steamed. However, a tip when you saute asparagus that wasn't mentioned in the recipe - the smaller (thinner) the stalk the better it is for sauteing. Larger stalks are better suited for steaming. And 10 minutes I found much too long, since the butter needs to heat up quite high to saute I think 10 minutes would of burned it or the garlic. I sauted for 5 minutes.

Pear Honey Cranberry Sauce

I only gave three stars because I did not like the taste of honey with the cranberries. It was too much, I might try again minus the honey and add more sugar. I like the pears with this recipe.
