Pasta Pomodoro

I make this all the time, especially when I'm in a hurry. It takes only about 10 minutes to make. I have never used balsamic vinegar before but I'm afraid it would ruin the taste. To me, it's all about the garlic, fresh tomatoes and fresh basil!

Pecan Pie Bars I

I gave some of these to my neighbor and she came over the next day raving about them. She said, "These are the best pecan pie I've ever had, and I'm 83 years old"! They are delicious!! I think I cooked them a little too long because they weren't very moist inside but still out of this world.

Tuscan Bean 'Goppel'

I finally got around to making this; have had the recipe stored away for a long time. I'm glad I fixed it because it is really, really good. I'm not real sure how I want to eat this; as a side, over pasta, or main dish. I noticed that one reviewer had eaten it cold as a salad but I would think the beans would make it too starchy. Anyway, it's delicious!

Potato Croquettes

These are very tasty but did fall apart. I should have read the comments before I made them! I halved the recipe, added some garlic and onion powder, left out the bacon and used parmesan in the mix and also mixed in with the bread crumbs. Next time I will add some flour and try the Panko instead of bread crumbs. I love panko - it makes such a beautiful crust. My daughter loved these and I will definitely make again.

Breakfast Casserole

This was very easy and tasty but it sure was flat (as in height)! Maybe it's because I used bacon instead of sausage (didn't have any sausage). I also sprinkled some cheese on top. It needs some herbs or spices but I haven't come up with any ideas yet that I think would go well with this casserole. Thanks for the recipe!

Quick Lemon Crisps

This recipe is quick and easy, and the cookies are very good; however, I wanted CRISP cookies and these were not. The only change I made to the recipe is that I used butter instead of shortening because I don't cook with shortening anymore.

White Bean Tuna Salad

Healthy and delicious! This is the perfect recipe with omega from the tuna and fiber from the beans. I used the white beans (don't like kidney beans) and I omitted the olives, didn't have any. It was really quite good.

Apple Spice Dump Cake

I am so disappointed! This was very tasty if you could ignore the dry cake mix! I had never heard of "dump cake" before and after reading several of the recipes, I thought how much easier could making a cake be. I used one can of apple filling and added some applesauce to cover the bottom of the pan. I used a white cake mix and added cinnamon, nutmeg and a little ground cloves to it. I did everything else just like the recipe said. I sprinkled nuts on top and dotted the top with slices of butter. I cooked it at 375 for 45 minutes and I have a powder covered cake! I put it back in the oven, after pressing the top down, for 15 minutes and it helped a little bit. I noticed in a few reviews of other dump cakes that some people had this same problem but I didn't see any responses as to what could have been wrong. Can someone tell me what they think went wrong. I would appreciate the feedback. In the meantime, I'm going to have a piece of dry topping cake with a wonderful, tasty bottom!

Basil Chicken over Angel Hair

I wanted something quick and easy and this really hit the spot. I didn't have any chicken cooked so just went without it and it was absolutely delicious. The good thing for me is that you can make as much or as little as you want. Since I cook for one, this is a great recipe. I will definitely cook this often.

Spring Strawberry Spinach Salad

I have a recipe very similar to this one except it calls for balsamic vinegar which is delicious with strawberries. Also, waaay too much oil! (Got to go - Eli Stone is coming on. Love that guy!

Fresh Tomato Salsa

When you order a shrimp cocktail in Sonora, Mexico, this is what you get with shrimp added and it is delicious. When we are vacationing there, we can't get enough so, of course, I make it at home now. I use jalepenos but I think next time I'll throw in a couple of serranos. The only drawback to this recipe is that it does not keep well in the fridge; it gets too watery and kind of mushy so don't go overboard on the amount you're making!

Apple Squares

I followed the recipe exactly as written although a couple of things threw me like "sprinkle the remaining sugar and cinnamon over the top" but there was no "remaining" sugar and cinnamon. The recipe says to mix together the butter, brown sugar and 1/2 cup of white sugar which is listed in the list of ingredients. Also listed is 1/4 tsp cinnamon which went into the flour mixture as directed. The batter was so think I couldn't even stir it, let alone spread it in the pan! If I had to do it over again, I would make drop cookies.

Cinnamon and Lime Chicken Fajitas

I made this dish tonight and was disappointed. The chicken was very dry and I couldn't taste the cinnamon at all. I made it, following the recipe as is. Since limes don't have a lot of juice, I had to add half a lemon. The recipe sounded intriguing but I don't think I will make it again.

Chicken with Chipotle

This is absolutely delicious! I cook a lot of Mexican food and this is one of the best. I used chicken breasts, browned them in butter and olive oil. I added a clove of garlic to the sauce. Those chipotles are HOT! I make salsa with jalepenos and habeneros and this was really hot. I was surprised and pleased. I cut the recipe down to 2 servings and wish I had made more!
