Tomato-Cream Sauce for Pasta

This recipe is a great starting point. I add tons of extra veggies (zucchini, eggplant, mushrooms, spinach) then puree half in the blender, then add it back in to the sauce. I also add a small can of tomato sauce. Delicious way to sneak some extra vegetables onto my boys' plates.

Easy Roasted Red Pepper Hummus

I made the hummus in my blender which was kind of a pain because of the thickness, but it turned out nice and smooth. I also made my own tahini. Homemade tahini is really quite strong so I think next time I will add a little less, maybe 1/4 cup. Served with home baked pita chips. Overall, it was delicious and didn't last long!

Pleasant Pork Chops

This had good flavor complexity and I could really smell and taste the bay leaf. My chops were a little thick so I simmered them for about an hour and a half, but they were dry. If I make this again, I will either use thinner pork, or give myself more time, so that the meat can break down. Served with egg noodles and peas.

Original Homemade Italian Beef

This was so good! My mom said she likes the beef better than pulled pork. I started mine the night before and let it go all the next day. It was perfect. The only change I made was I threw in a sliced onion and toasted some kaiser rolls. I also served it with the option of adding sauteed onions, peppers, and mushrooms. I will definitely make this again.

Roasted Garlic Cauliflower

This is how I roast my cauliflower, but I skip the resealable bag and just toss it all on the baking sheet. I also add the juice of half a lemon for a little kick. Yum!

Black Bean And Corn Salad II

This was quite yummy! I did decrease the oil a little, added a green pepper, used the whole bag of corn, and used half of a red onion in place of the green. I had two limes but they didn't produce enough juice so I added a little zest. On the back of the can of black beans there was a similar recipe and it called for red wine vinegar. I thought the dressing needed a little more tang so I added a few splashes. Next time I think I will add a jalapeno. Also, try to make this the same day you are serving it. I made the salad the night before (except for the avocado) and I thought the flavors melded too much. It was a lot fresher tasting right when I made it.

Chicken Enchiladas V

I like my enchiladas with more stuff, so I add a can of black beans to the chicken mixture. I also add a second can of green chiles, more chili powder, and a tablespoon of cumin. I also increase the amount of the soup mixture so I can stir more into the filling and spread more on top. It usually ends up being 2 cans of cream of chicken and a whole 16oz container of sour cream. My picky 3 year old actually eats when I make this!

Oatmeal Pancakes I

If you are truly looking for "light and fluffy", this is not the pancake for you. They are tasty but dense, even with conservative mixing. I like to add diced up ripe banana (and a handful of walnuts sometimes).

Easy Granola Bars

I tried this recipe because I had most of the ingredients on hand. I only substituted raisins for the cranberries and added a scoop of peanut butter. I pressed them into a jellyroll pan lined with a silpat. I baked them at 300 for 35 minutes. They were good but too sweet. They taste A LOT like a magic bar. The taste of the sweetened condensed milk really prevailed and it's not something you would expect in a granola bar. Overall, it was easy and yummy but not what I was looking for. I think I'm looking for something with more of a trail mix feel - fruit, nuts, and honey.
