Spinach and Orzo Salad
I made this for Superbowl Sunday to rave reviews. I followed the recipe as above but added a few extra items: Kalamata Olives, Artichoke hearts and some extra balsamic for a little more zing. As previously reviewed, this salad makes a lot but I am happy to report, it held up great for an extra two days after I made it so that leftovers could be consumed. I am sharing this recipe with all my party attendees!

Lemony Lentils with Kale
I made this for dinner last night. Totally divine! I followed the directions but here are the minor changes that I made: I didn't have fresh thyme so I substituted approx 1/2 t of dried thyme, rosemary and italian seasoning. I also threw in some mushrooms since I had some laying around. I also used red lentils instead of green because that's what I had. This tastes so good - the lemony citrus with the pepper flakes makes such a great combinations. I suspicious husband tried it gingerly - and ended up going back for more twice! I highly recommend!!

Pesto Chicken Florentine
I just made this recipe this evening and it is a recipe that I will use again. It is easy, tasty and flexible. I used some of the suggestions from other members and doubled the spinach and garlic. I used a canned alfredo. I also added a few finely chopped sundried tomatos and, since I had some on hand, some sliced grape tomatos. This made a lovely presentation with the red and green and the white alfredo (I added the pesto to the spinach mixture). Very Italian! With some sprinkled grated parmesian on top, it was really good! If you want it to be more diet, just skip the alfredo!
