Rabbit Gumbo

Too little okra for my tastes, I added the rest of the package of frozen okra. I tried the amount called for and wasn't happy with the results. Other than that it was fine. I raise my own rabbits and this a family favorite way to eat them now. Per the first reviewer, I did some research, and Roux is one of three thickeners for gumbo, File' powder, and Okra being the others. Okra and File' are seldom used in conjunction, but Roux can be used in conjunction with either or on its own, but is not a requirement, except for Cajun style which has an exceptionally dark Roux.

Pumpkin Crunch Parfaits

I used mostly sugar free/fat free versions of everything to cut down on calories and stretched out the portions. It was our adult Halloween treat and everyone loved it. The flavor is delicious even with the lighter versions. Great recipe!

Restaurant-Style Hashbrown Casserole

Awesome! I halved the butter and added light sour cream for the other half just to lighten it up a bit. My family raved over it. It tasted very similar to Cracker Barrel. Thanks for the recipe!

Butternut Squash Ravioli with Sage-Brown Butter Sauce

Wow, this was not good. The filling was tolerable, but the wontons tasted gummy after boiling and the sage butter sauce didn't blend well with the other flavors. I made this for my squash loving family and not one liked it.

Scones

Super easy! First time ever making scones and they turned out great. As other users suggested I only used about 3/4 of the egg/milk mixture so the dough didn't get too wet. I also added 2 t cinnamon and 1t vanilla, rolled out, cut into wedges then sprinkled with brown sugar and almonds before baking. It turned out delicious!

Southern Peach Cobbler

I am giving this 4 stars simply because I feel it would be unfair to rate it lower. My cobbler ended up a soupy mess with crust that was more like a large noodle stuck to the bottom of the pan and a butter/peach soup on top. That being said it TASTED good. I followed the instructions to a T and can't determine where I went wrong. Really wishing mine looked like the picture!

Apple Crisp IV

I followed the recipe as written and got something resembling apples with a cement mixture on top. For some reason the "crisp" was teeth-snappingly tough. Nobody liked it- EVEN with ice cream! I'd probably cut some flour next time. Live and learn!

Chocolate Macaroon Bundt Cake

So I followed others advice and doubled the water. I am glad I did or this cake would definitely be too dry. Also, the coconut filling did not drop, I had to force it down and spoon batter over the top of it. It TASTES really good but with the flaws in the recipe I feel it would not have been great had I followed it t a T.

Easy Batter Fruit Cobbler

Super easy and super delicious! I made it with 3 cups of fruit as suggested by others and am glad I did. I used frozen blueberries and frozen raspberries. I topped it with vanilla dream whip and it was amazing!

Black Bean and Chickpea Hummus

I only subbed cumin for curry as others had, only because I discovered I was out! I also used rehydrated chick peas and black beans. This is not hard to do you only need 2 hours to make dried beans usable, much better flavor and WAY cheaper.
