Garlic Prime Rib
I cooked it at 500 degrees for 20 minutes as the recipe calls for, and then 425 for about an hour. The center was still very pink/red even though the thermometer read 160/170 degrees.

Pumpkin Roll I
Terrific! Very easy to make and absolutely delicious. As one reader suggested, I dusted the cotton towel with confectioner sugar before flipping the slightly cooled baked dough onto it, rolled the towel/dough and let chill in fridge for a few hours to cool completely. Also as suggested, added 1 Tsp of allspice to the frosting mixture.

Roasted Vegetables
Delicious!!! I followed the recipe but substituted dry thyme (1 tsp dry = 1 tbsp fresh). Added basil as one reader suggested as well as zuchini and summer squash, covered the root vegetables loosely with tin foil and cooked for about 30 minutes, stirring about every 10 min, then added remaining veggies for last 10-15 min. The root veggies were a bit mushy so next time I will probably cook uncovered.
