White Bean Chicken Chili

I took this to a Super Bowl party and everyone liked it. I used all the ingredients except the coriander. The only changes I made were in the way I put it together. I live in Florida, so fresh Tomatillos are always available. I roasted the tomatillos, FRESH jalapenos, and poblano peppers and garlic under the broiler for a few minutes. I peeled and seeded all the peppers but one, you never can tell how how those seeds are, can always add more later. Threw those items in the blender and chopped them up. I sauteed the onions and then added the blended mixture in and coked that up and then added the tomatoes and all the seasoning. After that cooked for a few minutes, I added the chicken broth, but I added about 4 cups or so. Then I cooked that covered for an hour. I feel like the flavors needed to meld together. The next morning I threw it in a crockpot and added the beans, cooked chicken and fresh corn off the cob, brought it up to heat and served. Was nice and thick, had a great kick to it, but not over the top. Try it!

World's Best Lasagna

I thought this was very good and pretty simple. I don't understand the complaints about the salt and amount of cheese. I added salt to taste, did not even look at the measurement and I always add as much cheese as I feel like I want. I don't think changing these 2 ingredients compromised the taste. When it comes to these items I think its a matter of taste and not sure why people wouldn't adjust to their taste.

Christmas Breakfast Sausage Casserole

I love this recipe with Maple sausage. I live alone so I make half a recipe. Honestly I find that with the flavorful sausage and some chopped green onions, I dont need much cheese if any at all. (I'm a cheese lover) I usually use 3 eggs and a little more bread. I don't toast the bread but I mix everything up in a bowl then let it sit for at least 4 hours. (I tried it with the croutons but I liked it better with bread) Stir again before cooking. I think it has great flavor and god leftovers for the next few mornings for me!

Jalapeno Popper Spread

I loved this recipe and so did everyone else. I used fresh jalapenos and canned minced green chilies and jalapenos in the jar. Mixed fresh shredded parmesean cheese with Chipotle flavored panko crumbs for an extra kick. Wow! So good.

Spicy Chipotle Turkey Burgers

Amazing! I did add 2 peppers but I took the seeds out of them so I could still have all the smokey flavor of the peppers without the extreme heat. I also added 1/3 cup of panko bread crumbs and 1 tbsp of greek yogurt for extra moisture. I put them in the freezer for about 2 hours to firm them up and then cooked them. OMG they were so delicious I didn't even use any cheese. I did however top them with a chipotle mayo sour cream that I like. It's just 2 tbsp. fat free sour cream and 1 tbsp low fat mayo with as much chipotle pepper as you like and about 1 1/2 tsps of the adobo sauce. Awesome with some sweet potato fries!! Can't wait to eat the extra patties that I left in the freezer.

Greek Pita Pizzas

Yum! This was simple and delicious. I made this for 1. The only small changes I made was to cut back a little on the oil. I sprayed the pita with olive oil cooking spray for the first broiling. Then added about 1/2 tsp of evoo to the herb olive mixture. I also had a little smoked turkey breast I added for extra protein. I think it would be great wih chicken and red onions. But wonderful as written. I will definitely make this again!

Spicy Sweet Potato Soup

I made a half recipe because I only had 1 sweet potato. I followed the recipe except I had to use dried ginger. I tasted it before adding the sour cream with lime zest or cilantro (didnt have any tomatoes on hand) and it was good. But with the toppings it took it over the top for me. Yum. Easy cheap and delicious.

Macaroni Salad

This went great with the ribs I made. I only made half a box of elbow macaroni but used the recipe amounts for everything else. I didn't have any celery, green pepper or olives. So I had to substitute some frozen peas and carrots and added some chopped roasted red peppers and a little garlic powder. It was wonderful. I almost threw some crumbled bacon in too, but didn't feel like cooking any. I will make this again and definitely add the olives some fresh carrots and peas -I love them. The red peppers gave it nice color too.

Classic Creamy Coleslaw

I really enjoyed this. I made as written but I only had cider vinegar so thats what I used. And I used the coleslaw mix bag from the grocery store. I scaled the recipe down for 4 people and it was perfect. Not too saucy. It definitely needs to chill in the fridge for a few hours.

Brooke's Best Bombshell Brownies

These are absolutely the best brownies. Moist and soft on the inside slightly chewy and crisp on the edges. I love them. Only thing I did differently was to use half brown sugar half white sugar. I have also made them with chopped pecans or walnuts, and half pan with white chips. I really love them with the pecans.

Chocolate Rum Cake

I loved this cake I had to alter it slightly because of what I had on hand. I didn't have any instant pudding but my cake mix had pudding in it. I also only had some dark rum which someone brought me from the Bahamas. Don't really care to drink it but it was great in the recipe. We had a couple pieces after I glazed it and my friend thought he had gone to heaven. Very moist and incredible rum flavor. It was also delicious the next day after a night in the fridge! Yummy

Brown Butter Cookies

These cookies are absolutely delicious! I toasted the pecans as suggested by other reviews, and I'm certain that really added even more to the flavor. The dough was incredilble, It was hard to stop eating it. I don't feel the frosting is necessary either. It's very sweet. But cookies are great either way!

Steven's Baked Nachos

This is a basic nacho recipe that I have made many times before. However I have never tried the sour cream as a layer on the chips before baking. That is why I am adding a review. I really liked it with the sour cream. I used chicken that I marinated in Lawrys Tequilla Lime sauce. My chips of choice are Tostitos Gold. They're firm and don't get soggy. I served with homemade pico de gallo and guacamole. Yum yum.

Gerry's Chicken Enchiladas

Everyone who tried these loved them. Yes it was a bit time consuming but worth it. The only changes I made was to add a minced jalapeno and a can of diced green chilis instead of 12 green chilis. It had plenty of heat as I left half the seeds from the jalapeno to cook with the sauce. I also pureed the tomatoes in the food processor which helped thicken the sauce faster. I skipped the heavy cream and the enchilada sauce because the sauce was perfect without it. I also used colby jack cheese. They were outstanding. The chicken was moist and delicious. I marinated in lawrys Tequilla lime marinade. I served with a sweet corn cake, like they serve in a lot of Mexican Chain restaurants. I will definitely make these again.

Mmm-Mmm Better Brownies

Thought these were quick and easy and tasted very good. I used the butter instead of oil and a little less than a cup of sugar. I put a handful of walnuts in the batter. (maybe a little less than a 1/4th a cup.) I'm not a big fan of nuts in my brownies, but they really added something. Topped off with powdered sugar. They were yummy. Just not enough of them!

Cool Cucumber Salsa

I was hoping for better -but I think part of the reason mine did not taste as great as the reviews was due to my produce. I think my cukes and tomatoes wren't very flavorful and maybe not ripe enough. I should have tasted them first. There was plenty of heat though. I will try this again because I have had salsa with cucumbers before and loved it. Just make sure my veggies are in better shape. It definitely tasted better the next day.

Authentic Mexican Breakfast Tacos

I really enjoyed this -especially because I had everything on hand and was looking for something simple. I browned the chorizo with some onions then added the eggs and thre in some pepper jack cheese at the end. I think it's very important to use corn tortillas and crisp them slightly as directed in the recipe. It really makes the dish. I put a little fresh cilantro (I love fresh cilantro!!) on them, a bit more cheese and served with homemade salsa. Yummy late night snack!

Chocolate Pudding Fudge Cake

This turned out great. I made a few small changes. I used low fat sour cream and skim milk, and substituted Kahlua for the water. I didn't add all the chocolate chips because I thought it might be too much chocolate--sounds crazy I know. I spooned a rum glaze (from another recipe on this site) over the top after I had poked some holes in the cake and put in the fridge over night. Yum yum yum. It is excellent and the rum glaze added some extra moisture and sweetness without adding more chocolate. I will definitely make this again.

Chocolate Praline Layer Cake

This cake was a hit with everyone who tried it. I love the whipped cream frosting. (I'm sure if I felt totally lazy I could use cool whip in the future). I didn't change a thing, and had no problem with the cakes sticking as I baked them in silicone cake pans. The only problem I had was that my pecan topping went to the outer edges of cake pans maybe when I added the batter or during cooking? Not sure. At any rate there wasn't any topping in the center of the cake just on the edges. Still delicious but what did I do wrong?

Chocolate Bourbon Pecan Pie

I have made this several times and it always turns out perfect. The only changes I made were to sprinkle the chocolate chips on the pie shell before adding filling, and I used Kahlua instead of bourbon. I did not change anything else and it was delicious!
