All-Around Good Smoothie

I was looking for a good smoothie recipe to include protein powder in as I needed to up my daily protein intake. After reading the reviews on this, I was really excited and expected it to be great. It tasted awful! And the texture was horrid - very grainy and gritty. I made it again with less protein powder and used flax seed OIL as suggested by other reviewers and it is better - but still a little grainy (due to the protein powder I'm sure). The recipe is workable, but as is - I was unable to drink it.

Southwest Corn Spread

I LOVE this stuff! I don't put walnuts in it, but otherwise, the recipe is exactly the one I use. My 11 yr old son Loves it as well as my hubby. I took it to our family Christmas and it was a huge hit. I wouldn't change a thing. I love the fact that you can make it spicier or milder by adding or taking away the cayenne pepper. Another fun addition that I use sometimes is a can of Rotells tomatoes.

Macaroni and Cheese IV

Where as my childrend LOVED this, it really shouldn't be called Macaroni and cheese. It's more like a goulash. There was not even CLOSE to enough cheese in it to constitute calling it Macaroni and cheese. Also, the recipe said it served 7 but in reality it was enough to serve an army. Our family of 6 ate it for dinner, lunch the next day and lunch the day after that!!! My husband and I thought it was OK. Will make again in a smaller batch as my children enjoyed it.

Gary's Stuffed Mushrooms

Incredible mushrooms! Family loved them! Changes made - only used 3/4 cups of butter (besides what was used to make the stuffing) and I melted the cream cheese in with the butter and garlic for easy mixing. So yummy! We did have alot of stuffing left over after making over 30 mushrooms, but we didn't mind. Taking the suggestion of another person, we ate it on toast and it was SOOOO yummy! Thank you!!

Cherry Dumplin Cake

I was a afraid going into this that it would turn out way too sweet. But it ended up just wonderful! Super easy recipe! Quick to put together just takes awhile to bake. I didn't have any almond extract on hand so I just didn't use any. I think it would have added a nice flavor so next time I will definitely try some. Although, I'm thinking of trying lemon extract. I love lemons and cherries together! Will make again!!

Cha Cha's White Chicken Chili

Wonderful! My kids who HATE chili, loved this! I cut the cayenne pepper in half and omitted the jalepenos and it still had a kick to it. Add a little sour cream and cheese to your bowl and it tones down the spices just perfect!! I will be making this for the whole family this holiday season!!

Ricotta Gnocchi

It was pretty good. Kids liked it as well. I feel like there could have been a little more flavor to the gnocchi itself. Maybe add some more seasonings or something next time. All in all, we enjoyed it. Did take an awful long time to prepare however.

Sweet Potato Chicken Casserole

I did tweak this recipe a bit - I left the wine completely out. I also didn't add any of the cream for the sake of keeping it lower fat and more casserole like than stew like. After putting everything into the baking dish I sprinkled a very generous amount of cinnamon and nutmeg on the top, stirred it a bit, then covered it and put it in the oven at the recommended temp and rec. time. It was FABULOUS!!! My kids who HATE sweet potatoes LOVED this dish!!! A definite keeper in my book.

Oven Brown Rice

I would agree with the keeping it covered part. My whole family, kids included really enjoyed this recipe! I did keep it covered and the end product was so moist and yummy! I also just used chicken broth (no beef) because it was what I had on hand. Thanks for a great recipe!

Alfredo Sauce

Very yummy!! Was very rich, so you don't need a lot on your pasta! I did find that the Parmesan didn't melt that great either, leaving a gritty texture, but the taste was wonderful!!

Fruity and Frosty Acini di Pepe

HUGE hit with the family! Has become one of our favorites! We love fruit salad and what we like most about this one, is it's not so sticky sweet as some of them can be. Instead of heavy whipping cream whipped, I just add cool whip (saves some time!). Wonderful recipe!!! Thank yoU!!!

Ricotta and Artichoke-Stuffed Chicken Breasts

I made this dish for my kids, husband, mother and step dad and the adults LOVED it!! The subtle flavor of the artichokes and ricotta cheese was incredible!! My son ate it without complaints but did admit it wasn't his favorite. My daughter, who is the pickiest eater I know, was too freaked out about the artichoke hearts and refused to eat it. Otherwise, I'd say it was a big hit! I did add a little parmesan to the mix and seasoned the chicken breast with some basil. Great side dish with this is brown rice with a touch of cilantro, lemon zest and parmesan cheese.
