Tartar Sauce IV

I scaled this recipe down to 10 servings the original is 40. I used a vidalia onion and Miracle Whip instead of mayonnaise. I made it in the food processor. I have to say it was the best tarter sauce I have ever eaten. I think the sweet vidalia onion was the key ingredient.

Davy Crockett Cookies

The first time I made these I did not care for them. They were dry and not brown on top. I decided to try them again since they are so easy to make. Here is what I did different. I spread the batter in the bottom of my broiler pan which I lined with foil. I then baked them for 13 minutes then put them under the broiler for exactly 2 minutes. They came out delicious, brown on top and the chocolate chips were melted leaving a moist delicious cookie. I now make these cookies weekly. My husband and three boys just love em.

Spinach Salad with Peaches and Pecans

This salad was very good. My garden produced more spinach than I had anticipated. This salad was a nice changed from the traditional. I did not have fresh peaches so drained and rinsed a can peaches. It was still very good. I think the key is toasting the pecans.

Delicious Ham and Potato Soup

This soup was so good I didn't need to add cheese. I omitted the salt because I used a country cured ham steak. We raise two hogs every winter and the ham steak was sure delicious in this soup. I have made this recipe several times . I now add one cup of finely shredded coleslaw mix. My husband and three sons love it.

David's Yellow Cake

My husband said this is the best cake he ever ate. His mother only cooked from scratch so I take that as a huge compliment. He thought the texture of the cake was perfect as well as the taste. We raise our own chickens so the yolks were very yellow.

Quick and Almost-Professional Buttercream Icing

Lemon Coconut Squares

These were fabulous. I did as others suggested and cut the sugar by 1/4 cup and added 1/4 cup more lemon juice. I would not have wanted them any sweeter. So easy and delicious. My son who doesn't like coconut even thought they were good.

Chocolate Frosting I

I knew when I read the ingredients this was the recipe for me. Frosting does not have to be sickening sweet to be good. My kids loved it on a basic yellow cake (from scratch of course)!

Gingered Molasses Cookies

This is the best cookie I have ever eaten. I believe the orange peel is the secret to these delicious cookies. The recipe is perfect as is. I do not like cloves so I was a bit skeptical. My eight and ten year old sons chose these over the chocolate chip cookies I had made earlier. I did bake them for 15 minutes because my German husband likes his cookies crunchy. They were still perfecly chewy on the inside. Thank you for sharing this wonderful recipe!!
