Curried Honey Mustard Chicken

amazing and simple! Used approximately 1/4 C olive oil instead of butter, regular "yellow" mustard, and a pinch of red peppers (from the Dominos Pizza packs, to be specific). Melted the honey mixed with the olive oil in the microwave in a small container and whisked in curry, pepper, and mustard. Had no problems with consistency. Threw it all in a bag and let it sit overnight. Simply delicious. No leftovers. A staple recipe.

Coleslaw

As advised by other reviewers, I halved the sugar and oil. I added half a teaspoon of black pepper and used half an onion...the black pepper might not have made a difference (I couldn't taste it) but otherwise the recipe was great! Will make again.

Potato Spinach Casserole

I made this for my family and they loved it; I was so pleasantly surprised! To balance healthy with affordable, I usually keep frozen/canned greens on hand along with lots of potatoes so I thought I'd give this recipe a try. The only thing I changed was that I used yogurt instead of sour cream to make it healthier. It was such a hit I made it twice in a row. I read the directions wrong and mixed all the cheese together with the other ingredients, but this kept it from getting crunchy on top. The second time I made it I added a little extra water to make it a little more moist and used canned mustard greens instead of spinach, but either version was a hit. Definitely a keeper and good for getting people to eat greens.

I really liked this, but agree with some other comments: add more stock and spices and apricots. but i found the cooking time alright, and enjoyed the taste thoroughly!

Ginger Veggie Stir-Fry

great easy recipe! The first time I made this, I didn't have any orange juice so I used a little lemon juice mixed with 1/4 c water and a little sugar instead. super fast, turned out great! Only caveat, I used frozen green beans and they got soggy, so in the future I will follow the directions and use only fresh vegetables. Also, after trying the first batch, I followed the advice of another review and added some peanut butter, and it was different but also quite tasty!

Spinach, Potato, and Nutmeg Soup

A very nice, light soup. We enjoyed it for breakfast. I made a few changes due to necessity: used some half and half instead of milk; used kale instead of spinach, did not use boullion, added 1/2 tsp nutmeg and 1 1/2 tsp cardamom, 3 strips of bacon.

Cola Pot Roast II

DELICIOUS. I have never seen a pot roast go so fast, I barely got any myself! Added all ingredients except celery (didn't have any) to a crockpot and cooked on low for 8 hrs.

Beth's Spicy Oatmeal Raisin Cookies

chewy every time! I use whole wheat flour and brown sugar instead of white and occasionally substitute 1/4 c bran and/or 1/4 cup garbanzo flour for extra fiber. Sometimes replace 1/2 c raisins with chocolate chips or walnuts, depending on what I have handy. They always turn great! Love this recipe:)

Big Soft Ginger Cookies

one of my favorites! works every time. gotta be careful not to make the cookies too big though, or you will just get a pan-sized cookie. I often substitute whole wheat flour for the white.

Favorite Old Fashioned Gingerbread

added half a cup of honey and doubled the spices (gave it lots of moisture)...took this to a potluck and someone actually STOLE the half eaten pan before I left and gave me back the clean empty dish a week later, they liked it so much!!

Fennel Carrot Soup

One of my all time favorites! An easy, healthy soup...subtle flavor is very unique. I typically double the fennel and curry and add slightly more rice or use barley (barley might make the soup thicker if you don't add a tad more water, but that's up to you). Sometimes I add white mushrooms in order to trick myself and others into eating them...they don't change the flavor at all. All around a versatile and delicious recipe!

Ginger Snaps II

excellent recipe...forgot to make something for a deptartment picnic and found this recipe with 1 hr to spare--it was the biggest hit there! substituted 1/4 of regular flour for hazelnut flour I was trying to use up, the rest I used whole wheat flour, turned out great. WARNING: make tiny balls of dough, I made what I thought were a good size and it turned into one giant cookie. Still delicious though :)

Squash and Apple Soup

I loved this recipe! In response to all those reviews about flavor, just add a teaspoon or so of cinnamon and maybe half or a quarter teaspoon of nutmeg. You'll be able to smell it when you have the right combo of spices, it will smell like apple pie.

Cauliflower-Cheese Soup

Excellent! My only comment is about the cheese...I'm from Wisconsin, so I felt the need to add about a half cup more cheese to make it cheesy enough for my tastes...if you want it cheesy, plan on adding more. Otherwise delicious!

Bryan's Spicy Red Lentil Soup

This is the most disgusting looking thing I've ever eaten (I used green lentils instead of red ones, which I'm sure didnt help), but it was delicious! However, I did have to add about a cup more water, and used the tomato juice as well. Also, it took about 45 minutes for the lentils to cook.
