Black Bean Vegetable Soup

Made some changes. Used 3 kind of beans along with the black beans. Didn't purée any since I wanted it thinner !!! Used 5 cloves if garlic. It's a delicious low cal, meatless soup.

Flourless Peanut Butter Cookies

Who would have thought a Peanut butter cookie recipe could be so easy and delicious. I was very sceptical until I made them. I was floored, they came out perfect ! Very very delicious ! I got 20 cookies out of it which isn't too bad. I will make them again and again. They are so easy to make if you have to go somewhere in a hurry with a dish to pass. LOVE THEM !

Peanut Butter, Mayonnaise, and Lettuce Sandwich

I have been eating Peanut butter, cheese and mayo sandwiches for years. I never thought to put lettuce on them. I will next time. My husband thinks I am nuts, but it really is a great Sandwich.

Pasta Sauce with Italian Sausage

I have always just dropped the meatballs in the sauce raw. I think the recipe is great except too much bread crumbs and not enough garlic. Also need to add some salt to the meat mix. Maybe a tad bit more parmesian to the mix too. Other than that its perfect. I would not change anything. Dropping the raw meatballs in the sauce to cook gives the sauce a very rich home made taste. Superb !!!
