Quinoa Porridge

Delicious recipe. I followed one other reviewer's recommendation and used 1 cup almond milk (vanilla, unsweetened). After the quinoa boiled I reduced to a simmer and covered until cooked (about 20 minutes). I also added some raisins after cooking and it was a delicious breakfast!

Too Much Chocolate Cake

Absolutely delicious! I made this recipe as cupcakes for my daughter's birthday with vanilla pudding mix instead of chocolate to mix up the flavours (baked for 21 minutes and came out perfect). Will definitely use this recipe again for cakes and cupcakes!

Spaghetti Squash I

I have never cooked spaghetti squash before, so this was a great starting point for me. I added spinach, real bacon bits and 2 cans of boneless/skinless wild salmon. Omitted the olives since my little one doesn't like them. Great dinner tonight and my daughter loved it, didn't even know she wasn't eating pasta noodles!! This will be a regular in our house as my husband prefers to not eat carb heavy meals and this was a nice alternative.

Chinese Chicken Fried Rice II

Delicious! Family loved this recipe for supper tonight. I made a few changes based on suggestions from other reviewers and to make this a meal. I cooked brown rice a few hours in advance to ensure it was cold. Cooked egg in same pan as chicken without adding butter. Sauteed 3 chopped green onions, added 1 diced pepper (orange was on sale and added nice colour) and then 1 cup of frozen peas, added an additional tbsp of Japanese soy sauce. Thanks submitter and reviewers :)

Gourmet Mushroom Risotto

This was a fantastic recipe and a huge hit at my dinner party. The only change I made was to remove the wine as my 3 yr old daughter loves risotto so I substituted the wine with an additional 1/2 cup of chicken stock. I will definitely be making this dish again and again...even try adding a protein to make as a main dish.

Pumpkin Chocolate Chip Muffins

Great recipe! I substituted apple sauce for oil and reduced the clove and nutmeg slightly and baked for 22 minutes. My only issue is that the muffins stuck to the muffin liners and I am not sure why. Delicious muffins!

Beth's Spicy Oatmeal Raisin Cookies

Great cookie! Soft and tasty. I used butter in place of the shortening and took other reviewers suggestions of soaking raisins for 10 mins in hot water, adding 1/4 teaspoon of nutmeg and reducing amount of clove (reviews made me nervous but I think it would have been ok as original recipe indicated). Baked for 10 minutes and had to resist the urge to put back in the oven to bake longer as they did not look done...so happy I did not because the cookies turned out perfectly at 350 for 10 minutes. I baked 30 cookies and am freezing the remaining dough for a treat at a later date!

Easy Oatmeal Muffins

I followed other reviewers suggestions and added cinnamon, vanilla extract and cooked for only 16 minutes. I substituted the oil for sour cream (only because I didn't have mayo or apple sauce). I added 1 mashed apple and 2 mashed bananas. Delicious muffin result.

Shredded Brussels Sprouts

Delicious and I am not a sprout fan. Friend's mother peels the layers of brussel sprouts instead of shredding/quartering (keeps vibrant green of spouts when cooked), cooks in bacon grease and garlic. Services with chopped bacon bits. I will never eat brussel sprouts covered with cheese again!
