Apple Squares

Reviewed: Jun. 27, 2008
Terrific! Per others, I doubled everything except for the topping (kept the same), lowered the sugars to 3/4 cup each, and used 2 cups apple. I baked for 33 min. Go easy on the topping - you don't need to use all of it.

Shish Tawook Marinated Chicken

Reviewed: Jun. 15, 2008
This was outstanding! I was short on time so I only marinated the chicken for ~3hrs - still turned out delicious. I swapped the mustard for lemon juice as someone suggested previously. I served the chicken with pita, sliced tomatoes, and sliced cucumber for dipping.

White Chocolate Fruit Tart

Reviewed: Feb. 13, 2008
The filling smelled really cream-cheesy as I was making it and I was worried that it would taste disgusting, but WOW, once the tart had chilled in the fridge overnight, it settled and tasted fabulous! I made this using the crust from the "Down Under Lemon Tart" as another reviewer suggested (note that this crust recipe makes 2 crusts, and also be sure to prick the crust with a toothpick before baking so it doesn't dome upwards).

Eggplant Parmesan II

Reviewed: Feb. 3, 2008
Delicious! One large eggplant was plenty for 2 servings. I followed the advice of a previous reviewer and just used egg whites only for the egg dip to reduce calories. I also used low-fat cheeses.

Simple Salmon Chowder II

Reviewed: Feb. 3, 2008
Using the packaged scalloped potatoes made the chowder look a bit 'cheap' so next time I'll use fresh cubed potatoes instead. Very tasty though! I upped the dill to 1 tsp, replaced the 1 cup milk with 1.5 cup fat free half & half, and added a dash of cayenne pepper for some kick.

Caramel Shortbread Squares

Reviewed: Dec. 3, 2007
You must cut these into bars BEFORE the chocolate cools! I made the mistake of pouring the chocolate layer and then putting them in the fridge overnight to cool. Bad. When I went to cut them the next morning, the chocolate broke into big bark-like shards and buckled off the rest of the cookie.

Almond Apricot Bars

Reviewed: Sep. 12, 2007
Beautiful cookie to look at! Tasty as well, but I think the amount of white chocolate overwhelms the apricot. Maybe next time I make these I'll cut the white chips back to 1 Cup total and up the apricot jam to 1 or 1.25 Cups. One tip others have posted in other bar cookie recipes: when you're spreading the jam, don't spread it all the way to the edge of the pan/cookie - - - leave 1/4 inch or so from the edge. This leaves a little room for the jam to spread without burning to the edge of the pan.

Delicious Raspberry Oatmeal Cookie Bars

Reviewed: Aug. 14, 2007
Terrific! I added almond extract and cinnammon to the crumble mix. Next time I'll try this with some of those more exotic jams in specialty shops.

Pie Cake

Reviewed: Aug. 10, 2007
Not crazy about this - taste was bland and the center of the cake was still mush (I used cherry pie filling). Of course, I ate the edges anyway but I wouldn't make this for guests.

Raspberry and Almond Shortbread Thumbprints

Reviewed: Aug. 10, 2007
Dee, thanks for a great recipe. I made these for Christmas last year and people inhaled them! I wait to pipe the glaze (keep it thick) unti the cookies/jam are cool; otherwise, it just gets absorbed into the hot cookie/jam. These freeze really nicely as well.
