Avocado Mango Salsa

Reviewed: Aug. 24, 2009
This was amazing. Our fruits were perfectly ripe so that enhanced the overall dish. I used jalapeno instead of the habanero but it was so mild I might add more spice next time. I also left out the onion because I don't care for raw onion.

Bow Tie Lemon Chicken

Reviewed: Dec. 14, 2009
My fiance really loved this (and I did too). I used some fresh chopped snow peas instead of the frozen ones and left out the oil. I did not have lemon-pepper but used extra lemon juice. This was great! Creamy but not too heavy like stated earlier.

I used corn tortillas and it turned out well. They will just get crispy edges so you might cook it for less time.

Blackberry Cobbler II

Reviewed: Dec. 8, 2011
This was great. I think I would make a little more topping. Maybe 50% more because it was very good. And I tried using just 1/2 cup sugar for the berries but it could use a little bit more or just more topping for the sweetness. Great with Homemade Vanilla ice cream from Blue Bell.

Sweet and Spicy Popcorn

Reviewed: Aug. 18, 2008
I enjoyed this recipe. Try using the same spices when making corn as a side dish. I used a bag of microwave popcorn and decided to shake the spices in the microwave bag. Just sprinkle a little in at a time to get the spices more evenly distributed. You can probably omit the salt when using microwave popcorn.

Easy Microwave Chocolate Cake

Reviewed: Jul. 20, 2008
I enjoyed this cake and it was fun to make it in the microwave. I added 1/2 cup sugar and a total of 1/2 t baking soda as suggested. I placed pecan pieces and chocolate chips on top of the cake before I placed it in the microwave and when I brought it out they were on the bottom and a nice touch.

E-Z Drop Biscuits

Reviewed: Mar. 24, 2008
These were great! I too left out the cream of tartar because so many advised to do so. I scooped them with my cookie scooper that has a handle squeeze to release the scoop -so fast! I would reduce the sugar if using them with a savory dinner.

Mandarin Orange Chicken

Reviewed: Apr. 6, 2010
The recipe was great. We just had it tonight. I had chicken tenders so I chopped them into bite size pieces and omitted the flour, butter, and olive oil. I started by toasting the cashews in the cooking pan with a little bit of butter and then removed them from the pan and completed the rest of the recipe. I also added a dash of red pepper flakes. Delicious.

Chicken-Fried Steak Strips

Reviewed: Jan. 19, 2011
This was great. Loved the onion and garlic flavors. I didn't use seasoning salt but added a little salt to the flour because I had already used a little meat tenderizer before dredging.

Cajun Chicken Pasta

This was great. I actually had the oven on for something else so I roasted some yellow onion slices with the peppers with some olive oil on them and then added them to the chicken later. We will be making this again.

Cranberry Drop Cookies

Reviewed: Nov. 27, 2007
My family loved these for Thanksgiving. I added chocolate chips to half of the batch and I think those were the favorite. The cookies that were leftover the next day were very soft and stuck together. I think I will place wax paper in between layers of cookies to store them. I will make these again.
