Chicken Enchilada Soup III

Yummy! I rarely follow a recipe to the T, but for the most part I did on this one. Once I started tasting I added some salt and chili powder for a little extra zing. This really does taste like the Chili's soup, which is a favorite. I was going to go get it car-side tonight and found this first, yay! I did put tomatoes and green onions in as well as some cilantro (all as garnishes) with crumbled tortilla chips on top. YUMMY YUM YUM!

Summer Feta Burger with Gourmet Cheese Spread

This has to be absolutely one of the best things I have ever tasted! I woke up this morning thinking about it again! The flavor is almost indescribeable it is so rich. The burgers were so juicy and the cheese spread really cemented the medley of flavors! Wow! We aren't big traditional burger fans in our house, so we doubled the size of the burgers so it made four instead of eight and we had them as hamburger steaks. YUMMY!!!

The Best Thai Peanut Sauce

This recipe was great. I changed it up quite a bit, starting with melting down peanuts instead of using peanut butter, because that attempt was too sweet. I also added a lot of kick to it. But, this recipe gave a great base to figure out how to make my own sauce. Thank you!

Peanutty Beef Skewers

I love beef (especially grilled!) and I love anything peanuty thai, so when I found this recipe I was very excited! It was phenomenal. The beef was so moist and rich, even for a couple days after. The only thing I did different was put all of the peanut sauce in the bag with the meat, and made sure the pieces were heavy coated when they came out and went on the skewers. I also served it with homemade thai peanut sauce for some extra fun!

Phenomenal Chicken and Pasta in Creamy Pesto Sauce

This pasta is delicious! My family loved it. I always like an extra kick, so I added some ground red pepper in the end and a little extra virgin olive oil at the end for an extra zing!

Asiago Sun-Dried Tomato Pasta

I LOVE this recipe. It is perfect for entertaing and delicious. I have made a few adjustments to it that have made it even more bar none! I added pine nuts and, a hint of olive oil and ground red pepper flake to the final step. These touches give it that final zing if you like a little spice! Yummy yum yum!
