Gerry's Chicken Enchiladas

Reviewed: Jul. 8, 2011
This is a 10 star recipe!!! I add 1 can of cream of mushroom soup & sour cream to the enchilada sauce so it's not so tangy. Also added 8 jalapenos. DELICIOUS!!! I have been told by many people these are by far the best enchiladas they have every had. Well worth the time they take!

I had no idea if this would turn out because the dough was kind of hard to work with (pillsbury french bread) but it ended being a hit.

Joey's Peanut Butter Cookies

Reviewed: Dec. 20, 2007
Ive tried 2 batches cooking at all different temperatures and various length of time. Cannot get it right? The cookies are falling apart. The bottoms are cooked perfect but the middle of the cookie is still doughy? UPDATE..I think I got it...Cook at 355 for 8 minutes lining the pan with parchment paper. Also put the fork marks down the middle of the ball only, this squishes the dough to the sides so the center is flatter than the sides.

Charley's Slow Cooker Mexican Style Meat

Reviewed: Oct. 14, 2007
HOLY MOLY is all I can say. This meat is soo good!!!! My only suggestion is trim as much fat as possible before you start cooking. I did a add 1 beef bouillon cube and 1/2 tsp of cumin. I don't think this could be any better!!!! THANK YOU for the recipe!!!
