I made this last night for dinner and loved it! The only change I made was I used white vs red wine since that's what was available. I would say the cook time should be longer because the zucchini was a bit crunchy, so I will make sure I cook it longer next time. Great recipe!

Mexican-Style Goulash

This is a keeper! Because my hubby likes spicy foods, I replaced the tomatoes with a can of Rotel, added a package of low sodium taco seasoning, and chopped some green pepper. Thanks for an easy dish that will be in our regular rotation!

Mom's Cucumber Salad

I've been searching for a good cucumber recipe and this one is ok. The recipe doesn't call for refrigerating a few hours before serving, but I would recommend doing so to let the flavors come together.

Garlic Cheddar Chicken

This recipe is fantastic. I scaled it down to 2 chicken breasts, and used 1/2 the seasonings. I took the advice of another and added Old Bay as well. Next time, I may add some Panko instead of bread crumbs, just for crunchiness. Will definitely keep this in my dinner rotation!!

Chicken Breasts with Balsamic Vinegar and Garlic

My DH and I loved this recipe! The only thing I didn't do was add flour. Perhaps if I had, the sauce wouldn't have been so runny. Even runny, we devoured it and I can't wait to make it again! Served it with an asparagus recipe from this site and it was fantastic!

Slow Cooker Dump and Go Cheesy Chicken

This was very good, however, I rated it 4 stars because I made some personal changes. First, because there are only 2 of us, I used 2 chicken breasts. Second, my husband is a huge gravy and rice eater. So, I used 1 can of cheddar soup, 1 can of low sodium cream of mushroom, and 1 can of low sodium cream of chicken. It's astonishing how much sodium is in soup, so I always pay a little extra and get the low sodium. I added 1 tbsp of curry and 2 tbsp's of garlic powder. About 30 min before serving, I added some frozen peas. Served it over rice and had dinner ready after a hard day at work!!!

Corn and Black Bean Salad

I rated this a 4 because I made a few changes, but wow, is this a delicious recipe! I changed the corn to a 14 oz can, deleted the chili powder and cilantro (I just don't like cilantro and didn't want this spicy). I added red onion and red pepper for crunchiness, and left everything else the same. My DH has asked me to double to recipe next time as we both chowed down on the first batch! Can't wait until this summer and will use with fresh sweet corn and may take the advise of another by grilling the corn. This is definitely a keeper!!!

Moroccan Lentil Soup

I made this for my DH last night and he absolutely loved it! Too spicy for me, but I tend to like blander foods. I followed the recipe exactly except I used 2 cans of low sodium beef broth and 2 cups of water instead of 6 cups of water as indicated in the recipe.

Awesome Slow Cooker Pot Roast

Fantastic! My DH, who is a huge gravy lover, loved this recipe! I decided to use 3 cans of low sodium cream of mushroom soup so he could have the extra gravy, 1 pkg of dry onion soup mix, and substituted the 1 1/4 cup of water with regular coke, and only used 3 lbs of roast. Served it over rice and we were both in heaven!!! Thanks for a great recipe!!!

Baked Ziti III

Delicious! I followed the recipe exactly except for substituting ricotta cheese for the sour cream (I also halved the recipe). I had planned to cover with foil, as other readers suggested, but forgot and it still was fantastic. Served it with garlic toast and corn, which made it a perfect meal on this cold and snowy night!!!

Pesto Chicken Florentine

I gave this 4 stars because I made some changes. First, I only used 2 small breasts because there's just the 2 of us. I followed the advice of others and used Classico pesto (wonderful) and Classico light alfredo sauce. I diced up a small onion and a few mushrooms and cooked those with the chicken. I added about 6 garlic cloves and a package of fresh spinach. My house smelled heavenly and the dish was fantastic. This is definitely a keeper in our house and it was so easy to make. Thanks for a great recipe!

Kielbasa and Veggies

This is delicious! Like other readers, I used turkey sausage (I like Hillshire Smoked Turkey Sausage, it's peppery) and a bag of frozen spring vegetables (peppers, squash, asparagus, etc). My DH and I love onions, so I went ahead and browned the turkey sausage and onions in a skillet first. I diced 4 small red potatoes, only used 2 tbsp butter and sprinkled Mrs Dash on top. Didn't have any cheddar cheese, but had about 1 cup of colby/jack. Thank you for a great dinner recipe!!

Marie's Easy Slow Cooker Pot Roast

I gave this 4 stars because I made some changes. First, I only used a 2 lb roast. I followed the advice of others and rubbed Montreal Steak Seasoning on it and browned it in a cast iron skillet. I also substituted 1 cup beef broth for the water. When I came home from work, the house smelled incredible! Baked some crescent rolls and DH and were in heaven!

Southwest Chicken

Delicious! I cubed the chicken as others had done. I do think next time I'll use 2 breasts next time because DH and I loved the bean mixture! I added a bit more cumin and about 1/4 tsp of chili powder, added some green pepper and frozen corn instead of canned. Served it over rice and dinner was a hit! I rated this 4 stars rather than 5 since I didn't cook it as directly, but it's 5 stars with the additions! Definitely keeping this in the dinner rotation! Thanks Tamatt for a great dinner recipe!!

Slow Cooker Barbecue Ribs

I also agree that the fat did not come off in the oven as much as it did in the crockpot. After cooking in the crock for 8 hrs, change of plans made us not eat this for dinner. I wound up refrigerating them reheating them the next day. I was able to skim a lot of fat off while they were cold. I did change the ketchup to 1 cup and substituted 1 cup BBQ sauce. However, I felt that this recipe was way too saucy and wasn't able to enjoy the the actual taste of the ribs. I would actually give this 3 stars, but since my DH loved it, I gave it 4, but will probably not make this again.
