Oat Applesauce Muffins

a sweeter version of the Easy Oatmeal Muffins. (tastes like sugar.) i cut down on the sugar to about 1/3 cup because i had regular sweet applesauce. not sure the buttermilk made a difference. could probably just use regular milk. only soaked for about 15 mins, and that was plenty in the buttermilk. cooked for 28 mins. delicious, slightly heavier than Easy Oatmeal Muffins.

Kyle's Favorite Beef Stew

i halved the recipe and it made plenty! (the full recipe would be a tight squeeze in my crockpot.) i did do 2 c of beef broth (instead of water) and 1 packet of onion soup mix. and still did 1/2 c of wine. delicious! i cooked it high heat for 2 hours and low heat for 6 hours. everything was soft and well cooked. i made the potato chunks slightly bigger than i chunk for mashed potatoes... so maybe 1.5" cubed.

Shrimp and Asparagus Fettuccine

new review: excellent! old bay makes all the difference. pepper helps too! olive oil fine to use. [Good. Could use a little something else... maybe more seasoning. Second time, I used butter instead of olive oil and it was MUCH better. Just added parmesan and it was tasty enough.]

Andrea's Pasta Fagioli

delicious as is! followed it with water. did not have navy beans, so i used chickpea. used 3/4 lb elbows and it was pretty much all noodles (what i like). generous on the parmesan and no salt. next time, i'd half the recipe and only use cannellini white beans. (chickpea was a tad too flavorful.)

Aunt Hazel's Apple Oatmeal Cookies

made a healthier (aka not as tasty but good enough) version. used 1/2 c brown sugar, 1/2 c applesauce instead of butter, no walnuts (didn't have) and no icing. shredded apple, but can't really taste it. might try small chunks next time.

Garlic and Herb Marinade

followed recipe as best as i could (didn't have rosemary or italian seasoning, but used oregano/basil/parsley/garlic). i swapped olive oil for veggie oil. marinaded 2 breast halves for 8 hours. cooked them at 350 for 40 mins on foil-covered metal pan til it reached 165 degrees. moist and delicious! tasted like italian dressing, but maybe healthier?

Orzo with Parmesan and Basil

i have done this with rotini pasta and just boiled it in some stock/water (because i didn't have enough stock) and let it absorb. i turned off the heat before all the liquid evaporated. Edit: good as recipe says. I added grape tomatoes cut in half.

Chuck's Favorite Mac and Cheese

good as is. also did 6oz sour cream, 1/2 c milk and that was good as well. i doubled it, put it in a big foil pan that was slightly deeper and bigger than a 9x13. baked for 35 mins. it was the right amount for a large group picnic.

French Ham Cheese and Egg Fondue Casserole

picky 3 yr old daughter loved it. i halved the recipe and omitted the melted butter and parmesan. it was salty enough without it. i used cold cut ham. next time i would use 1 or 2 more eggs. it was very light and i wouldn't mind it being heavier. you could add a little broccoli.

My Kid's Favorite Zucchini Bread

delicious! the only difference i did was 1/2 c oil and 1/2 c applesauce. i can't even tell i did a substitution. to one of the loaves, i added 1/2 c chocolate chips. i like it better without. the chocolate is overpowering, but fine if you want to taste chocolate. my big loaf pan was 65 mins and a small foil loaf pan was 75 mins.

Rosemary Ranch Chicken Kabobs

delicious. cut back on olive oil to about 1/3 c. followed recipe otherwise! edit: baked thin chicken tenderloins at 450 for 20 mins. it was pretty good, but definitely better grilled.
