Halved recipe. Made 1 c of self-rising flour by adding 1.5 t baking powder and .25 t salt to all-purpose flour. Easy!

Addictive Pumpkin Muffins

tastes good, even though no oil/butter is used. i used over 2c chocolate chips instead of raisins/walnuts. i also cut sugar to 1 c white and 1 c brown. they taste fine! (probably the chocolate chips help) the muffins stick to paper liners, but not foil liners. i also sprayed with pam and just put them in the tin. that worked as well. freeze well.

Bacon, Potato, and Egg Taco Ole

i halved this, and it would have easily fed 3 people. i cut the potatoes the same size you'd see at a restaurant. and i used unpeeled new potatoes. would probably use fewer potatoes. i also added avocado and cheddar cheese and it was good. would probably be good with a little salsa too.

super easy. i didn't have tarragon, but i bet it would be delicious. i kind of want to put shoyu on it instead of butter/lemon/tarragon. good as is, but probably could experiment with flavors.

Kyle's Favorite Beef Stew

i halved the recipe and it made plenty! (the full recipe would be a tight squeeze in my crockpot.) i did do 2 c of beef broth (instead of water) and 1 packet of onion soup mix. and still did 1/2 c of wine. delicious! i cooked it high heat for 2 hours and low heat for 6 hours. everything was soft and well cooked. i made the potato chunks slightly bigger than i chunk for mashed potatoes... so maybe 1.5" cubed.

Oatmeal Raisin Cookies IX

i used applesauce instead of oil, wheat flour instead of white flour. it was good. couldn't taste the wheat flour. probably not as delicious as using oil or butter, but applesauce kept it sweet. i also used parchment paper on the cookie sheets.

Missy's Candied Walnut Gorgonzola Salad

could probably cut back a little on the sugar. also, might consider 2 T raspberry vinaigrette, 1 T olive oil, and no vinegar. i used blue cheese b/c it was all i could find. seemed like an okay substitute. i'm sure gorgonzola would be delicious. Second time: tried with goat cheese and romaine and it was super good.

Slow Cooker Pulled Pork

so easy! i used roast pork/top loin pork. i sprayed crockpot with pam (not sure it helped). low for 8 hours, drained, shredded, added sweet baby ray's honey (super sweet) and put it on low for another hour. another time, i used 5.5 lbs pork loin, 42 oz root beer on low for 10 hrs (prob could be 8). it fed 20 with tons of leftovers b/c there were also hot dogs and mac and cheese.

good. hardens when dry. add more milk as needed. i used 3-4 tsp milk per batch. i made a double batch and it iced half a batch of flower pot cookies. (48 3" x 2" cookies)

Herb Roasted Pork Loin and Potatoes

easy and very moist. i used a meat thermometer, but the bottom was a tad rare because i didn't stick the needle all the way down. i chopped potatoes about the size of golf balls and they were way overcooked after boiling for 10 mins. would be good with red potatoes too. and maybe boil carrots a few mins. i had a 2 lb pork loin and it took 75 mins total in the oven. my 3 year old actually ate it! she never eats meat.

Curried Quinoa

i liked it, but the finishing taste was a bit bitter. my husband thought it was okay. i used about a teaspoon of regular chili powder and it was good! i used lemon juice, but i don't know if i could tell a difference. maybe i'll sweeten it next time?

Delicious. Took at least 15-20 mins longer to bake. Eggs still soft... maybe less milk? Used colby jack instead of swiss, ham instead of bacon, no onion, no butter, and added broccoli.

Good and easy. I added old bay to the flour. I forgot to salt and pepper. Tested oil by putting a pinch of flour in the oil. However my tilapia tasted fishy.

Spaghetti Squash I

I cooked the squash for 30 mins in 1-2" water in the oven. The knife could go into the outside easily. The squash was still a little crunchy. Would cook for at least 10 more mins next time.

Paper Salmon

good. i just used squares of parchment, which might have helped the ease of keeping it folded. (folded long edge first, then really rolled up the short ends.) the only drawback was i had to unroll everything to test if it was done. not super flavorful, but good enough.
