Kyle's Favorite Beef Stew

i halved the recipe and it made plenty! (the full recipe would be a tight squeeze in my crockpot.) i did do 2 c of beef broth (instead of water) and 1 packet of onion soup mix. and still did 1/2 c of wine. delicious! i cooked it high heat for 2 hours and low heat for 6 hours. everything was soft and well cooked. i made the potato chunks slightly bigger than i chunk for mashed potatoes... so maybe 1.5" cubed.

Oat Applesauce Muffins

a sweeter version of the Easy Oatmeal Muffins. (tastes like sugar.) i cut down on the sugar to about 1/3 cup because i had regular sweet applesauce. not sure the buttermilk made a difference. could probably just use regular milk. only soaked for about 15 mins, and that was plenty in the buttermilk. cooked for 28 mins. delicious, slightly heavier than Easy Oatmeal Muffins.

Country Quiche

easy and good. tasty with thyme, but probably not necessary. i did 1 and 1/2 of the recipe to fill the deep dish pie crust. i also did not do bacon or onion, but added small tiny broccoli florets.

Easy Oatmeal Muffins

love how healthy these are! i used wheat flour and they taste great to me. i also used applesauce instead of oil. would probably be good with apple chunks in them. a little bland, but i like them like that. even my three-year old liked these.

E-Z Drop Biscuits

easy! left out cream of tartar as suggested by others. tasty as is. for healthier version, i used half wheat flour, half white flour; and melted brummel spread for the butter. i also made sure oven was ready to go before mixing the wet ingredients into the dry ingredients.

delicious as is. sauce is just okay. will probably serve with my own sauce or jar sauce. i could probably do 1/2 t salt or less. kids might like 1/2 t pepper, but i like the spice level at 1 t pepper.

Chicken with Quinoa and Veggies

delicious. i used mozzarella (the only thing i had), and it was okay, but i bet feta is perfect. i also used dried basil and lemon juice. it sufficed. update: feta and lime juice really make this dish. especially the feta. very good!

Southwestern-Flavored Ground Beef or Turkey for Tacos & Salad

made 1/3 of this recipe with ground turkey. used salsa instead of tomatoes. didn't add salt. a little more subtle than packaged seasoning, but i like that about it. yum!

Stovetop Granola

easy. i did what another reviewer suggested: carefully broil 2 c oats, melt 2 T butter, 2 T brown sugar, 1 T honey, 1/2 t vanilla, dash of salt in saucepan over medium heat. add oats, 1/2 c almonds, some flax seed and heat for 4 mins. add 1/2 c cranberries for another minute. spray cookie sheet with pam, put in warm oven with broiler off for 30-60 mins to dry out.

Herb Roasted Pork Loin and Potatoes

easy and very moist. i used a meat thermometer, but the bottom was a tad rare because i didn't stick the needle all the way down. i chopped potatoes about the size of golf balls and they were way overcooked after boiling for 10 mins. would be good with red potatoes too. and maybe boil carrots a few mins. i had a 2 lb pork loin and it took 75 mins total in the oven. my 3 year old actually ate it! she never eats meat.

Chocolate Chip Oatmeal Cookies

i substituted 1/2 c applesauce for 1/2 c butter, cut back the sugar by about 1/3 c, cut chocolate chips to 1.25 c. it definitely tasted healthy (boo) but since i eat them semi-frozen, i can't really tell. edit: i also tried 1/2 c applesauce for 1/2 c butter, only 1/3 c sugar, 1 c chocolate chips, and 1 c wheat flour. they come out the same shape they go into the oven. they taste more like pancakes, but i kind of like that.

i liked it, but the finishing taste was a bit bitter. my husband thought it was okay. i used about a teaspoon of regular chili powder and it was good! i used lemon juice, but i don't know if i could tell a difference. maybe i'll sweeten it next time?

Hash Brown Quiche

Delicious! I wish I would have thawed potatoes first. It took a long time to brown just the edges. I used chopped spinach and broccoli. Again, wish I would have thawed and drained them. Used three eggs. Baked for 30-35 mins.

Gingerbread Boys

i used 1 c white sugar, and .5 c brown sugar (b/c i ran out of white). seems fine. i subbed molasses for dark corn syrup. i also left out cloves. i might have rolled out too thin, b/c they were done after 8 mins. when i made them thicker, and let the dough warm up, the men bloated.
