Strawberry Muffins

i used applesauce instead of oil, and whole wheat flour instead of white flour. i did 1.5 c strawberries, and added .5 t vanilla and .5 t cinnamon. good! it made 12 muffins, baked for 25 mins. perfect. maybe use liners next time: when i took them out of the pan, some of the strawberries were left behind.

Rhubarb Crunch

i doubled the fruit, using strawberries when i ran out of rhubarb. i added a dash of salt to the fruit. i also cut back on the butter by almost half.

Creamy Carrot Soup

good! i accidentally used 1/4 c brummel and 1/4 c olive oil. still turned out okay! i added a lot more salt because i used low sodium broth. very good. a little ginger-y, and maybe i added a little too much rosemary. (i added more rosemary before it had time to mix with the soup.)

Zucchini Cornbread Casserole

cheesy! i drained zucchini. since i only had 2 c zucchini, i added a little milk... maybe 1/4 c. i used 7 oz cheese and it was very cheesy. i also omitted onion. i baked it for 40 mins. next time i'd use 5 oz cheese.

Rosemary Ranch Chicken Kabobs

delicious. cut back on olive oil to about 1/3 c. followed recipe otherwise! edit: baked thin chicken tenderloins at 450 for 20 mins. it was pretty good, but definitely better grilled.

My Kid's Favorite Zucchini Bread

delicious! the only difference i did was 1/2 c oil and 1/2 c applesauce. i can't even tell i did a substitution. to one of the loaves, i added 1/2 c chocolate chips. i like it better without. the chocolate is overpowering, but fine if you want to taste chocolate. my big loaf pan was 65 mins and a small foil loaf pan was 75 mins.

French Ham Cheese and Egg Fondue Casserole

picky 3 yr old daughter loved it. i halved the recipe and omitted the melted butter and parmesan. it was salty enough without it. i used cold cut ham. next time i would use 1 or 2 more eggs. it was very light and i wouldn't mind it being heavier. you could add a little broccoli.

Mini Meatloaves

I soaked the oats in the milk while mincing an onion and preparing other ingredients. I made it into 3 loaves and cooked it for 45 mins. Temp reached 165, so I took it out and covered with foil until rest of meal was ready. I put the ketchup sauce on too thick. Didn't need all of it. Husband thought it tasted like McDonald's, which he said wasn't a bad thing. I like how moist/soft it was. Toddler liked it too.

Orzo with Parmesan and Basil

i have done this with rotini pasta and just boiled it in some stock/water (because i didn't have enough stock) and let it absorb. i turned off the heat before all the liquid evaporated. Edit: good as recipe says. I added grape tomatoes cut in half.

Oatmeal Raisin Cookies IX

i used applesauce instead of oil, wheat flour instead of white flour. it was good. couldn't taste the wheat flour. probably not as delicious as using oil or butter, but applesauce kept it sweet. i also used parchment paper on the cookie sheets.

good. hardens when dry. add more milk as needed. i used 3-4 tsp milk per batch. i made a double batch and it iced half a batch of flower pot cookies. (48 3" x 2" cookies)

Garlic and Herb Marinade

followed recipe as best as i could (didn't have rosemary or italian seasoning, but used oregano/basil/parsley/garlic). i swapped olive oil for veggie oil. marinaded 2 breast halves for 8 hours. cooked them at 350 for 40 mins on foil-covered metal pan til it reached 165 degrees. moist and delicious! tasted like italian dressing, but maybe healthier?

made a healthier (aka not as tasty but good enough) version. used 1/2 c brown sugar, 1/2 c applesauce instead of butter, no walnuts (didn't have) and no icing. shredded apple, but can't really taste it. might try small chunks next time.

Apple Oatmeal Crisp

can't go wrong with this much sugar and butter... i used almost 4 cups of granny smith apples (3 apples). but then i wished there was more crumble. I liked the crumble on top better than the crumble goo on the bottom. next time i would put more of it on top. try this next time: 1.5 c rolled oats, 1.25 c flour, 1/3 c white sugar.

Swiss Chicken Casserole II

it was so easy, but just okay tasting. i used stovetop stuffing, and it was way too salty. i used white wine instead of milk. i liked the flavoring, could use even more wine. it could have used broccoli to balance the salt. i would probably prefer to just bake the chicken with swiss cheese and then have stuffing on the side.
