Sweet Corn Cake

I have been making Sweet Corn Tomalito from this site for a long time, but finally tried this recipe -- my husband & I both liked this one better! It was very moist, sweet & had a great texture. For my own preference, I think I will use less corn next time. I also used 1 cup of cream-style corn instead of the water, and cut the butter in half.

Slow Cooker Carnitas

My husband requested carnitas, so I used this recipe - he gave it five stars and said it was the best dinner he's had in a long time. Since I was cooking for only one person, I did not want to purchase a huge pork shoulder - I just used a 2 lb. pork ribeye. Doubled all spices, used minced garlic instead of garlic powder, left out cinnamon. Before seasoning, I cut the pork ribeye into two equal pieces and seasoned each separately to speed cooking time and enhance the flavor of the spices. Turned meat after 1.5 hours, shredded after 3.5 hours. Placed meat on a baking sheet with juices from slow cooker, baked at 400 degrees for 20 mins. as suggested by another reviewer. Served with Mexi-corn, Spanish Rice and greens as a huge entree salad.

Cottage Cheese Chicken Enchiladas

These were fabulous. We had four adults and a toddler, and everyone enjoyed these. I made 6 of the enchiladas with shredded chicken as the recipe states, and then 6 of the enchiladas were filled with spinach filling. I just sauteed the garlic and onions in the oil, added the chilies and taco seasoning, and then split all of this between two bowls -- one containing thawed/drained frozen spinach, and one containing shredded chicken. I also just mixed the shredded cheese, cottage cheese and sour cream right in with the chicken and spinach to save time when filling. I thought this was a very easy and filling recipe.

Microwave Oven Peanut Brittle

What a quick and unique recipe! I make this just to have at home, but have also made it several times when I needed a quick thing to bring to a party or a homemade gift. Everyone who has tried it has loved it, and they can't believe I make it in the microwave! One thing I have found to be very helpful is to work VERY quickly when spreading the hot candy onto the cookie sheet, and to spread it as thinly as possible - if there are some "holes" or gaps in the candy, it doesn't matter!

Grain and Nut Whole Wheat Pancakes

This is the only pancake recipe I will ever use from now on! We like to have these as "breakfast-for-dinner." I usually add some frozen (thawed) blueberries to the batter just before cooking them.

Russian Mushroom and Potato Soup

This is the best soup I have EVER made. My husband, usually not a soup fan, loved this, too. The dill was perfect. I did not use leek - used chopped sweet onion instead. Also used whole milk instead of cream as that is what we had. Fantastic recipe!

Grandma's Fresh Apple Cake

This is delicious - very moist and flavorful. CHANGES: I shredded the apples, used half brown sugar and half white sugar, used half whole wheat flour and half white flour, used dates (no raisins and no nuts). ADDITIONS: added a pinch of nutmeg, some artificial butter flavor, 1 tsp. of vanilla. I also added a crumbly topping made of flour and sugar with some butter cut in. Next time I might decrease the amount of sugar by a little.

Burrito Pie

My husband first said, "Oh no, not burrito pie! I never like burrito pie!" But after one bite of this burrito pie, he changed his mind! My modifications: used semi-mashed up black beans instead of refried beans, added some taco seasoning from a packet, baked in two pie plates (one with no meat), and added a few cubes of Velveeta cheese to the filling.

Broiled Tilapia Parmesan

This was absolutely delicious, and very quick to prepare and broil. My 18-month-old could not get enough of this fish, so I am sure I will be making this a lot. My husband and I equally enjoyed this recipe, and I gave it to my mom who is gluten-free and who is always looking for new recipes that she can eat.

Poppy Seed Lemon Loaves

Excellent recipe. The only thing I changed was to add more lemon juice and more lemon zest to the batter. The almond extract was delicious with the lemon flavor of the bread. My husband, my toddler and my dad all loved this bread and it was gone in a day!

Chuck's Favorite Mac and Cheese

I had to try this, after seeing the list of ingredients! It was amazing. My toddler and my husband usually just pick at macaroni and cheese (even other from-scratch recipes I've tried) -- but they BOTH loved this one. Before baking, I sprinkled with a mixture of melted butter and Panko bread crumbs -- delicious!

Downeast Maine Pumpkin Bread

This was a fantastic recipe - just what I was looking for. Substituted half of the oil with plain yogurt and it turned out great. After greasing, I dusted the loaf pans with cinnamon-sugar, and then -sprinkled a little cinnamon-sugar on top of the batter before baking.

Blonde Brownies I

My whole family loved these. I scaled the recipe to 12 servings to fit my 11 X 7 pan. Found this recipe when I wanted a quick baked dessert but did not have chocolate for brownies. Substituted chopped peanuts for the walnuts, and peanut butter chips for the chocolate chips. Also drizzled dark chocolate Hershey's syrup over the top and swirled it with a knife before baking. I did have to bake it for 45 minutes - probably due to the larger pan I used.

Chunky Cheesecake Brownies

Perhaps the best dessert I have ever made, and I have made a LOT of desserts! I only had 4 oz. of cream cheese on hand, so I halved the sugar and chocolate chips that go with the cream cheese mixture, and it is still amazing. I want to try next time with either peanut butter in the cream cheese, or using some peanut butter chips.

Potato and Bean Enchiladas

A great-tasting, unique vegetarian recipe. My husband and I really enjoyed this. However, we both agreed that next time I should make double the tomatillo sauce, and spread a little in the baking dish before I put the enchiladas in. Other than that, I will not change a thing next time!

Vegetable Filo Pie

My whole family enjoyed this recipe, including my 10 month old! I used potatoes, yellow squash, broccoli and mushrooms which I steamed in the microwave. After steaming, I added a little balsamic vinaigrette salad dressing to the vegetables, along with the seasonings in the recipe. Next time I think I would like to try artichoke hearts and kalamata olives!

Salsa Chicken

My husband & I both LOVED this recipe. I used chicken breasts sliced lengthwise into tenders to speed baking and make smaller portions of chicken for each person. When I sprinkled the cheese on top in the last few minutes of baking, I also added some crunched up tortilla chips. I served this with bowls of toppings at the table: little shreds of romaine lettuce, chopped tomato, sliced green onion, and chopped cilantro. As other reviewers said, this was a little hot, but we enjoyed it that way. I was really wishing we had some avocado to put on top -- would help balance the spicyness. Guacamole would be great too. To complete the meal, I made oven fries seasoned with olive oil, seasoned salt, cumin and oregano.

Runzas (meat pies)

This was my first time making anything like this -- it was delicious! One change I made to the original recipe was substituting half of the ground beef with ground sausage. My husband, especially, enjoyed this recipe. I made them for lunch, and he had them again for dinner! Will also be a nice thing to make for him to take to work in his cooler. These were also good with cheese melted on top in the microwave, and then dipped in pizza/marinara sauce.
