Morning Glory Muffins I

Very yummy. We grate the apple instead of chopping it, and I have either warmed the raisins in some apple juice and then pureed before adding, or just left them out. I usually leave out the walnuts because my husband doesn't care for them, but I'm considering food-processing them and then adding them in next time.

Grandma's Baking Powder Biscuits

Very simple recipe - we have even just dropped the dough onto a cookie sheet using a large ice cream scoop and the biscuits still bake through just fine.

Bill's Sausage Gravy

We use just a regular breakfast sausage - not one with a particular seasoning to it - and this turns out very nicely - we do add a bit more salt once it is cooked through though.

Deliciously Moist Pineapple Muffins

1c sugar was plenty as another reviewer noted. I was out of oat bran and/or wheat germ, so I simply ground up the same amount of rolled oats and it worked just fine. We did leave out the coconut as a family member doesn't care for the texture of it - but I'm glad to have another different muffin recipe in the rotation!!

Golden Yam Brownies

Really yummy! We did cut back on the sugars as one reviewer recommended, used only whole wheat flour, added some cinnamon, and did not make the glaze. They were plenty sweet and I'm not sure if people were concerned about the yams - I just shredded them on a cheese grater and they do disappear into the batter while baking, similar to carrots or zucchini in similar recipes - but even more so. Fun change of pace for snack time or dessert. :)

Microwave Potato Chips

These tasted good for being very simple - the only problem we had was how few we could make at a time and how fast they were being eaten. I don't know if they would taste very good once they have gone 'cold' ... so while this could come in handy - I don't know if we would make these on any kind of regular basis.

Pear Bread II

We shred our pears instead of chopping - they tend to get a little gooey when left in chunks (after the bread has been baked). We leave out the nuts, just a preference, but a great and different quick bread to switch up the same old same old.

Touchdown Chili

We left out the chiles because I honestly never buy them ... our kids don't care for added spiciness. We sadly have a bean allergy in the family so I need a beanless chili recipe on hand. This one is very yummy. I did substitute pork broth for the beer, and might take the chili powder down to 1/4c next time. Thanks for the recipe - a good one is hard to find without beans as an ingredient!

Bar-B-Que Sauce

So simple and kid friendly. Sometimes we leave the Worcestershire sauce out and it still tastes great! We stopped buying store brands because any flavors we liked have or now have HFCS in them; we couldn't find any that didn't that our kids liked. Thanks for the recipe!

Chocolate Zucchini Cake III

Used this recipe for my son's 2nd birthday party cupcakes - we had a lot of zucchini from the garden to use up and he is a terrible veggie eater, so I thought - the best of both worlds :) At first taste I thought these were great - but later on I felt like they had a little bit of a bitter taste. Maybe it was that our zucchini were a little on the larger side, but I'm not 100% sure. We'll try it again this summer with small zukes and see.

Applesauce Noodle Kugel

I grew up eating kugel with apples and raisins in it so to me it's comfort food, even when it isn't perfect. In making this for the first time for my kids though, I have to say that I agree with another reviewer - we don't eat margarine, so I substituted butter - and I halved the amount called for as suggested by the same person. 1 cup does seem like a lot, but I'm not sure if cutting it affected the moistness of the kugel. We buy only full fat dairy, so our sour cream was not fat free and I was hoping it would make up for some of the butter left out. We used 6 eggs in place of the egg substitute, and used peeled chopped apples in place of raisins as I didn't think our kids would go for them. I should have covered with foil the whole baking time - they didn't care for the crunch to the top noodles. I'll try this again, but making a few tweaks for more flavor.
