Tomato-Curry Lentil Stew
Excellent recipe, quick prep! I added carrots for more color, and extra curry and garlic. Also, when adding the stewed tomatoes I poured in the whole can rather than add extra water. Great for a rainy day with a toasted piece of ww sourdough bread :)

Oatmeal Carmelitas
Super easy recipe, reviews on how they tasted aren't back yet. I omitted the nuts but didn't substitute anything more than a few extra semi-sweet chips, so that probably affected the consistency. Mine turned out a little gooey with all of the caramel. Next time, if I omit the nuts again, I will make more crust to contain everything. I did bake an extra 10 minutes to achieve the golden brown and used softened rather than melted butter as others have suggested. No problems getting it out of the well-buttered pan other than all of the sticky caramel.

Best Bircher Muesli
I recently went to Chicago and had a version of this at The Corner Bakery, they called it Swiss Oatmeal. I loved it so much I had to come home and figure out how to make it. This was by far the best recipe I found. To make it more like The Corner Bakery version I used vanilla yogurt instead of plain and rather than add a cup of raisins I used a mixture of currants, raisins, and dried cranberries. I also added half of a Granny Smith apple per bowl for a tart flavor like they do. The only thing missing was one of their awesome raisin crisps covered with raw sugar! Just a tip, I leave a big bowl of oats, honey, milk, and yogurt in the fridge then by the bowl add the rest. This keeps the sliced and quartered bananas and apples fresh and yummy and the oats nice and soggy!
