Tangy Potato, Green Bean and Bacon Salad

This was very delicious served warm/room temp. It went perfectly with our pulled pork sandwiches for dinner. A nice change from a traditional potato salad. I'll be making this again. Thank you for this recipe, Don!

Chicken and Gnocchi Soup

This soup is absolutely delicious. I followed the recipe exactly; however, I did omit the cornstarch & water......it didn't need it. My grocery did not have the small gnocchi so I did cut mine in half.

Chocolate Chip Cookie Ice Cream Cake

Made this for a family get together last weekend. It was gone in minutes! Bonus points because I didn't have to turn on the oven. I used packaged cookies for the crust but used Wegmans yummy store-baked chocolate chunk cookies for around the sides. I used choc chip cookie dough ice cream for the first layer and then regular vanilla for the "balls" on top drizzled with hot fudge and decorated with mini M&M's.

Rosemary Ranch Chicken Kabobs

Now I know why this recipe is so highly rated....it's because this chicken is delicious! I made up the marinade and let my chicken pieces marinate all day while I was at work. When I got home, I just put them on the skewers with some added red peppers, green peppers, purple onion and zucchini chunks. I served with rice pilaf and we loved it. The chicken was very moist and flavorful. I will definitely be making again and again.

Crispy Oven-Fried Fish Fillets

I was looking for a way to oven fry some cod that I had and this was suggested when I inquired about a recipe on the Recipe Buzz. I followed the recipe/method with one exception......I used some panko bread crumbs which I seasoned instead of the croutons. DH and I both enjoyed this very much and it will definitely be made again in this house.

Fluffy Pancakes

Great pancake recipe! So quick to put together and they cook up light and fluffy.....we really enjoyed them. I always have the box mix around because I thought it was quicker, but not really. I did add 1/4 tsp. of vanilla for personal preference and DH likes blueberry pancakes so I put a few on his as they were cooking.

Fish Fillets Italiano

Excellent! I used cod for this recipe together with a can of diced tomatoes with roasted garlic and onion. I still used the onion and garlic called for in the recipe and did add just a dash of red pepper flakes, salt and pepper. I served over/with thin spaghetti and we gobbled it right up. It only took me about 30 minutes to get this on the table so this is a great weeknight meal for us.

Banana Crumb Muffins

These muffins are fantastic! Mine were very moist and I love the crumb topping. I had 3 nice-sized bananas so the flavor was wonderful. I made 10 muffins as the recipe states, but I think that next time I'll do 11...they rose nicely and my tops were spread a little too far over the muffin tin cups. I wrapped them individually in plastic wrap and then put them in a freezer bag. I wanted to be able to pull one out at night so that it was ready in the morning when I wanted one for breakfast. They froze nicely. I'll be making these over and over again! UPDATE: 3/27/11 Made these again and I cannot begin to say how good these are....so moist and flavorful. The crumb topping just makes them! I did go ahead and make 11 muffins this time and you know, I really think I'll stretch it to 12 next time.

Best Tuna Casserole

Made a half recipe of this tonight for our dinner. I grated my onion into the casserole because I didn't think it would get cooked enough and I did also add some milk to keep it moist. I didn't have any chips, but I did have a half of a can of french fried onions to use up so I put those on top. This was very tasty and I was able to put this on the table very quickly after work. For the reviewer who said this was "too bland", don't be afraid to add a little pepper and some garlic powder to this.

Neat Sloppy Joes

Made these tonight and DH and I really liked them. I made the recipe as written but next time I think I will add some chopped bell pepper as well. This is a quick weeknight meal for me to prepare after work. I will definitely make this recipe again.

Salisbury Steak

This is a great recipe exactly as written. It needs no tweaking and, if made properly, there is plenty of gravy for the patties and for mashed potatoes. If the gravy is too thick for your liking, simply add a little water. I will be adding this to the regular fall/winter rotation. Great comfort food.

Baked Cod with Boursin Herb Cheese

I made this recipe as written except I only made 2 servings. Also, I only found tomatoes with roasted garlic and onion. DH and I enjoyed it and I will most likely make it again. The only problem I had was once the Boursin melted it tended to want to slide off of the top of the fish taking the tomatoes with it. I decided to serve with thin spaghetti making a light sauce with the remaining tomatoes and reserved juice, extra garlic, a splash of white wine and a dollop of the Boursin. All in all a pretty quick weeknight meal for us.

Mini Meatloaves

This is the 2nd time I've made this recipe. I've always been a meatloaf fan, but DH could take it or leave it. Out of all of the meatloaf recipes I have used, he eats more of this one though. I had never put oats or cheese in meatloaf before, but I love the texture of this meatloaf. I just make it into one loaf and slice it up. I do add dried minced onion, garlic powder and fresh ground pepper. Best part about it.....meatloaf sandwich for lunch tomorrow! I will make this recipe over and over.

Butterfinger Chunkies

I made these today hoping they would be a good addition to my cookie tray this Christmas. They are a really good cookie and it's a good thing they will be going in the freezer until Christmas or they would all be gone by then! I followed the recipe exactly and ended up adding about 1/4 cup additional flour because the dough just seemed a little wet to me. I rolled the cookies into balls with my hands. I did not grease my cookie sheets as instructed. I did not have a problem with my cookies spreading too much and I let them cool on the cookie sheets 2-3 minutes before attempting to move them to a rack to finish cooling. I ended up with about 4-1/2 dozen cookies. Not sure how you would end up with only 2 dozen unless you make really big cookies :-)

Cranberry Apple Stuffed Pork Loin

I made this today using a seasoned cube stuffing mix prepared with onions and celery sauteed in a stick of margarine - I added the diced apple and some chicken stock and then poured all over the stuffing cubes. I added the dried cranberries which I had plumped up in a little hot water and then mixed all together. I spread some of the stuffing on the pork roast which I had prepared according to the directions and then seasoned with salt and pepper. I then rolled up the roast and browned it in a little canola oil on all sides and then roasted to an internal temp of about 145°. I covered the roast with foil and made a gravy out of the pan juices. The remaining stuffing mix that didn't go into the roast was put in a casserole dish and baked during the last 20 minutes of roasting the pork. I've become a huge fan of cranberries in the stuffing. This is definitely a company worthy main course which I will be making again. Hubs isn't the biggest fan of pork but he does eat it. He loves stuffing so that helps.

Shrimp Scampi and Tomato Broil

I have to admit, I made this because Pam's picture looked so good. I tend to like to use the recipes that have pictures.....I know, not fair. This was really good. I followed the recipe with the addition of a little butter and a shake of hot pepper flakes. Hubs and I both agree that I should make this again. I served over linguine.

Pork Chops Stuffed with Smoked Gouda and Bacon

I made these pork chops tonight and followed the recipe and cooking directions exactly. One of the butchers at Wegmans cut my chops to my specifications and also offered to make the pocket for me! DH isn't a huge fan of pork, but did a good job of cleaning his chop! We both agreed that we would like to try this stuffing in some chicken breasts as well. This meal is definitely company-worthy.

Zippy Summer Shrimp

Really excellent! I made this with one pound of shrimp for just the two of us and kept the rest of the ingredients the same except for the red pepper flakes. I added a splash of chicken stock and a tablespoon of butter to the sauce and served this over thin spaghetti. It was nice and spicy. I will definitely serve this one again.
