Black Bean Avocado Salsa

Pure deliciousness! I made this exactly as the recipe calls for and I wouldn't change a thing about it. It is perfect for tortilla chips and it would be amazing on grilled fish or chicken. I'm going wrap up some scrambled eggs and this salsa in a tortilla tomorrow morning for my breakfast!

Tiramisu Layer Cake

This cake received rave reviews from my family on Easter Sunday. I made primarily for my tiramisu loving Mom and she just went on and on about it. I made the recipe as written but did add a cake extender recipe because I wanted thicker layers. This was a surprisingly light cake and the whipped cream frosting held up just great. I made the cake a day ahead which I thought helped the flavor. It also traveled well as it is a 40 minute trip to my Mom's house. The cake didn't shift at all.

Chewy Chocolate Peanut Butter Chip Cookies

This cookie recipe came up in my ingredients search for "peanut butter chips". I read many reviews and decided to use 1-1/4 cups of butter just softened to room temp., not melted, together with 1-1/2 cups of white sugar, 1/2 cup brown sugar and increased vanilla to 2 tsp. (as well as the other listed ingredients). I mixed everything together and then chilled the dough for well over an hour. I always chill my cookie dough. My cookies turned out fabulous! They are not too flat, are crispy around the edges and are nice & chewy. I got exactly 5 doz. cookies from this recipe.

Oven Roasted Parmesan Potatoes

Our potatoes were delicious and we enjoyed them very much! I used the exact measurements of the cheese and seasonings but did have to use russet potatoes because that is all I had. I do believe they would have been even better with the red potatoes. I put all of my seasonings in the bowl, mixed that up, then I added the cut potatoes on top of that, drizzled the oil over top of the potatoes and mixed everything up. Potatoes were coated just fine with the amount of cheese & seasonings that I'd measured out. I placed the potatoes on a sheet tray lined with parchment paper and turned them over after 15 minutes. I will add that my oven has a convection feature that I did turn on and my potatoes were perfectly brown & crispy after about 30 minutes. I will not hesitate to make these again.

Sinfully Delicious Chocolate Pie

This pie was absolutely delicious! I used regular sugar and brought my ingredients to room temperature as suggested by many. I followed the directions exactly. The filling was smooth and silky...the pie firms up nicely in fridge. This will be one of my go-to desserts for guests, but they must love chocolate!

Oatmeal Carmelitas

I was looking for a recipe to use up a jar of Chef John's Salted Caramel recipe that I had in the fridge and this was it! I had all of the other ingredients on hand except for walnuts, which I would not have put in anyway due to our preferances. These are delicious! I find them neither too sweet or too greasy. They are rich and decadent. I will add this to my list of goodies to bake often!

Salted Caramel Sauce

Made this caramel sauce over the holidays to use in or on two different recipes, one of which is the Caramel Macchiato Cheesecake recipe also from this site. I never knew that caramel sauce was so easy to make....the video is very helpful. I will never buy a jar caramel sauce again.

Caramel Macchiato Cheesecake

I made this cheesecake in December for an office Christmas luncheon and it was a huge hit! It is delicious. I made the cheesecake recipe exactly as written but did make Chef John's Salted Caramel for the topping which is extremely delicious as well!

Mom's Fabulous Chicken Pot Pie with Biscuit Crust

Very delicious! I made this recipe as written except using dried parsley because I did not have any fresh. I did follow another reviewers suggestion and sliced my biscuits in half so that they were not so thick and they cooked beautifully. This is a keeper that I will definitely be making again. I used leftover rotisserie chicken this time.

Warm Dijon Potato Salad

We really enjoyed this potato salad. I wasn't sure how I would feel about a warm potato salad that included mayonnaise, but it was very good. It was just as good cold too. I'll be making this one again.

Caramel Corn Treat Bags

This was the first time I ever made caramel corn and I will not hesitate to do it again in the future! I popped my own corn, one-half cup kernels yielded the 4 quarts needed for the recipe. I used a disposable foil roaster that I sprayed with cooking spray and had no problems with anything sticking. The amount of caramel covered the popcorn thoroughly. I opted to add pretzels, dry roasted peanuts, chocolate covered raisins, Reese's Pieces, M&Ms, gummy worms, candy corn and little jelly pumpkins directly to the bowl of corn. It looked so cute sitting out on the table with all of the goodies in it!

Apple Crisp II

I've made this apple crisp twice now and love it. The crisp stays nice and crunchy and is my favorite part! I wanted to get this ready a little bit ahead of time so I made the crisp part first and just covered with plastic wrap. A little bit later I peeled the apples and covered them with the sugar, flour and cinnamon mixture. I did toss this all together in the baking dish because I felt it would help more evenly coat things. I covered and just let it sit until I was ready to top with the crisp mixture, fully intending to add the water, but in the confusion of our family get together, I forgot. I just topped with the crisp mixture and put it in the oven. It was plenty juicy though and very delicious served warm with vanilla ice cream.

Chef John's Minestrone Soup

This soup is excellent! I made as written with the exception of the beans. I couldn't find cranberry beans and I don't really care for garbanzo beans. In their place I used light red kidney beans and cannellini beans. Also, I never cook my pasta in the broth....I always cook it separate and add to the individual serving bowls. This helps the pasta not get mushy and soak up all of the broth if I want to save some for later or give some away. If I do give some away, I always give a bag of pasta to go with it! I will definitely be making this one again.

Sweet Basil and Oregano Bruschetta Chicken

I've made this dish twice now and we have loved it both times! I will continue to buy this spice mix and keep it on hand...very easy to put together which makes it a great meal to have on a weeknight when time is limited.

Pumpkin Muffins with Streusel Topping

I made this recipe exactly as written...I did not change a thing. I didn't have pumpkin pie seasoning but did make my own from a recipe on this site as well. I filled the muffin cups almost to the top and I got exactly 18 muffins. I had enough streusel topping for all of the muffins. They are delicious. A nice light & fluffy muffin. I will make these over and over!

Amish Slaw

This slaw recipe is delicious! In my mind 1 medium head of cabbage would equal 2 16 oz. bags of the preshredded slaw mix, so that is what I used. I followed the recipe (maybe used a touch less sugar) and did add finely chopped red onion. It did not bleed as others mentioned. It's the perfect slaw recipe for a picnic. Yes, there was excess dressing in the bottom of the bowl, but cabbage does give off some liquid once it is dressed. It happens with mayo based slaws too. I just mixed it up well and used a slotted spoon to put it in my serving bowl. I made this the day before serving and it was still nice and crunchy. I will make this again. EDIT 7/26/12 - I forgot to mention that I ended up using apple cider vinegar after debating with myself whether to use it or white vinegar.

Tangy Potato, Green Bean and Bacon Salad

This was very delicious served warm/room temp. It went perfectly with our pulled pork sandwiches for dinner. A nice change from a traditional potato salad. I'll be making this again. Thank you for this recipe, Don!

Chicken and Gnocchi Soup

This soup is absolutely delicious. I followed the recipe exactly; however, I did omit the cornstarch & water......it didn't need it. My grocery did not have the small gnocchi so I did cut mine in half.
