I grew up a true southerner, born and raised in Birmingham, Alabama. I am currently a bartender with an extensive knowledge of mixing drinks. I am engaged to the most beautiful woman in the world and I will be married in May. I also have experience in the food service industry working various positions in different kitchens.
My favorite things to cook
Anything southern, Cajun-Creole, I really enjoy one-dish meals such as casseroles, Lasagnas, etc. Grilling, and I've recently found interest in baking
My favorite family cooking traditions
Using the recipes that I grew up watching my mother and my "Mamma" Nell cook. Keeping it simple when it comes to cooking something simple such as Turnip Greens.

The first time I ever cooked Traditional Red Beans and Rice
My cooking tragedies
The first time I tried to cook Chicken and Dumplings was complete disaster that ended up with the whole batch being thrown in the trash

Hashbrown Breakfast Bake
This is a great recipe, and really convenient, because you don't have to lei it to sit overnight, you can just throw it together and put it in the oven. I use the southwestern style hash browns that come already thawed, that way you don't have to add the spices.

Potato and Jalapeno Gratin
This recipe is a great side for a steak. Some adjustments you can make are trimming the amount of Jalapenos you use, or substituting Swiss for Gruyere. Sometimes if there are kids eating this dish, I do half with Jalapenos, and half without. This dish is very versatile.

Bubba's Jambalaya
I've made this several times and found it enjoyable every time. A few suggestions for those who think there's too many tomatoes: Add one can diced tomatoes, and one can Rotel, it cuts down on the tangy-ness and adds an extra "kick".
