Good, but great if you double recipe then add 2 cups leeks, 1T fresh thyme, 1 cup chooped fresh Basil!

Shepherd's Pie VI

Dont be scared to experiment...I added a top layer of Quinao Corn Bread: 1 cup quinoa meal, or flour 2 cups corn meal 1 tsp salt ½ tsp baking soda 1 ½ tsp baking powder 1 Tbs honey or brown sugar 1 large egg, beaten 3 Tbs melted butter or bacon fat 2-½ cups buttermilk Preheat oven to 425° degrees. Prepare quinoa meal by grinding raw quinoa in a blender, or use quinoa flour. Combine all dry ingredients. Combine wet ingredients. Mix the two together. Bake in greased 9”x9” pan or greased muffin tin until golden (about 25 minutes). Serve hot, with lots of butter. For a spicier variation add a 4-oz can of chopped green chilies or jalapeno-and-tomato relish.

Homemade Steak Sauce

Love this homemade sauce. Anyone know how long it will keep in the fridge? Ps I doubles the reciepe since I also use to marinate ribeyes overnight before I sear and then broil them.

Lentils And Spinach

Like most others, I tweaked this to our taste. 1 white onion, 1 cup red lentils, 3 cups chicken broth, 1-teaspoon Sri Lankan Curry powder and two large andouile sausages sliced 1/2 inch. Threw it all in a crockpot on high for 3 or 4 hours.

Ultimate Corn Bread

This tastes awesome. Don't pay attention to recipe snobs who rate depending on how thier grandma made something. If it tastes great then rate it appropriately. I made a couple chnages to taste...1T honey, 1/2 cup corn, and used larger Lasagna dish.

Cinnamon-Peach Cottage Cheese Pancakes

I liked these except I could taste the eggs. Even my son asked if there were eggs in them. Oddly, he didnt notice the cottage cheese nor peaches. So next time I'll try with only two eggs and maybe bananas.

Potato Kielbasa Skillet Recipe

Make a double batch of the stir fried onions/bell peppers. Have half the night before with ribeye, and the remainder added to the potate kielbasa skillet the next day.

Hamburger Pie

I made a few changes...split recipe between two pie plates with crust (had one for dinner and the other went to the freezer). Increased the mashed potatoes, deleted the tomato sauce and substituted 3/4 cup brown gravy per ea pie plate/dough. Also used fresh green beans. My finicky 9 yr old son loved it. Next time I will add a dough topping to make a true pie.
