Comforting Chicken

Made this tonight, it was delicious! Since I had no fresh green peppers, I used a can of diced green chiles (we like it hot). And also had to use broccoli cheddar condensed soup instead of cream of mushroom. Thank you to previous reviewers; pre-cooked the (brown) rice and made sure to bake the dish at 350. Wonderful comfort food, thank you Edna!

Taco Soup II by Julie - Customized

Rich and Simple French Onion Soup

Wonderful recipe. Many others did not call for Provolone (we are not Swiss fans), and I only had Sherry on hand (rather than red wine) so I chose this recipe over all the others. Despite the finicky eaters at the table who do not like their bread 'soppy' everyone enjoyed the soup. Other recipes asked for sugar to be added to the onions, which I did out of curiosity. I will not add the sugar in the future. After carmelizing the onions, there is plenty of sugar. The only other thing I did differently is to use my own beef stock from a Crock-potted roast. I believe homemade stock is always better than consomme or boullion cubes. Thank you Lori for a great recipe!

Blackened Tilapia with Secret Hobo Spices

Zowie! This was excellent. There is just the right amount of spice (if you like spicy), and the fish comes out moist on the inside, and crispy delicious on the outside. I think it could have used a little cornmeal in the spice mix, to give the coating a bit more substance, and crunch. Nevertheless, paired with my own Mexican brown rice recipe, and a side of spinach; it made a wonderful meal. You gotta try this! Thanks for the recipe.

Ham Fried Rice

This was quite good. We are trying to switch to brown rice rather than white, so that is what I did, cooking it in chicken broth in the rice cooker. I didn't use ginger (didn't have any), but I did saute onions, slightly cooked carrot, thinly sliced celery and garlic - and set aside while rice was warming. I had leftover pork chops and so I used thin slices of the meat rather than ham; after sauteing the pork I removed it from skillet and cooked the eggs in the drippings, and set aside. I followed the rest of the recipe, adding some garlic pepper and Sage (healthy dose!) rather than garlic powder. I always add a bit of Sesame Oil when making fried rice, it gives a deeper flavor. And lastly, we always serve our fried rice with chili powder at the table for extra seasoning if desired. Thanks for the recipe!

Kielbasa Potato Skillet

This is one of our family's favorite week-night dishes. We like it hot, so we add red pepper flakes while the potatoes are sauteing. Sometimes I will add green chiles as well. Very adaptable to personal seasoning preferences.

Pork Chops with Blue Cheese Gravy

Wonderful recipe! Topped the chops with sauteed mushrooms/garlic, served the Blue Cheese Gravy on the side (daughters not crazy about bleu cheese). I didn't have whipping cream on hand, so I subbed sour cream and a little milk - the gravy was smooth and delicious. Served with Garlic Mashed Sweet Potatoes from this site, and sauteed brussels sprouts. What a terrific flavor combo. Thank you Toni for a great recipe; it's a keeper for sure!

Roasted Garlic Sweet Potatoes

Superb! These potatoes were absolutely wonderful, and met my expectations. We enjoyed the combination of the sweetness of the potatoes, and the strong garlic flavor, complimented by the heat and spice of the seasonings. I wasn't sure about trying to peel the potatoes after baking, so I peeled them first, and wrapped each one in foil. This recipe is a definite keeper! Thank you Kelly for introducing me to some unique ideas I never would have thought of!

Classic Red Beans N Rice

Just realized I had not rated this. It was wonderful - used ham hocks and chorizo instead of ground beef (Emeril says use Andoullie ? sausage, which I did not have). Can't wait to see how it tastes tomorrow. We like it HOT!

Russian Tea Cakes III

Emma, thank you for the recipe! Made these last night, and they turned out great. I was worried when the dough kept falling apart; but alas after chilling it was very easy to mold into the perfect sized balls. Thanks to all the reviews, we sugared them a second time after cooled off. I expect these will be well received at our cookie exchange later today.

Salsa Chicken

This was an awesome way to change up our usual 'Mexican themed' dinner. Paired with Mexican Rice II and Buffy's Refried Beans from this site, some tortillas and sour cream on the side, it made for a wonderful meal. Thank you Faye, for a great recipe.

Slow Cooker Casserole

Very good! Great easy recipe for rushed days, simple and down home comfort food. I used spaghetti noodles instead of Ramen (all I had) and seasoned with Johnny's Salt, garlic powder and ground pepper. Also topped with crushed leftover Tim's Cascade Jalapeno Chips before putting in oven. Will make this agian, thanks for the recipe Sue.

Super-Delicious Zuppa Toscana

We loved this soup! Thank you for a wonderful recipe; simple and yet delicious. I did not have heavy cream, but sour cream worked perfectly. And while there was no cheese in the recipe, we couldn't resist the addition of some shredded pepper jack and cheddar. Will be making this soup again for sure!

Double Peanut Butter Cookies I

Wonderful! Melt-in-your-mouth cookies. Found these searching for eggless because I was out, and so very glad I did! I was also out of chocolate chips, so had to sub chocolate syrup drops in their place. Otherwise, followed recipe exactly and they were to die for! Thank you Robin.

Beef Mushroom Stroganoff

This recipe was good; I subbed ground beef because that was what I had on hand, and decided not to use red wine but rather cream sherry, after reading reviews. I also decided to put the sauce together a little differently, making a roux first and adding the sour cream at the end as I am used to doing with stroganoff.
