This is as simple as Junk Food...but far more delicious & nutritous! We have made these jems strictly by the recipe, and we have done them without the Thyme. We like them much better without as Thyme seems to over power the other flavors. We also prefer the crunchiness of Sea Salt rather than table salt. And, we always use Mini Yellow or Mini Red potaoes..President's Choice. They are cremey & soft inside but nice and crispy on the outside. The bonus is there is no cutting & certainly no pealing (cause that's the real nutritious part) required! Great recipe..but with a couple tweaks it is simply Amazingly Fabulous! Happy Roasting!
