Apple Cranberry Stuffed Pork Chops

Reviewed: Dec. 3, 2007
We don't usually prefer pork chops-but we do now! These were incredibly simple and fantastic. I almost doubled the filling for 6 chops and it was perfect. We also seasoned the chops with a little poultry seasoning before browning and used apple cider for the sauce because that is all we had. Even my picky 5 year old that barely eats meat had 3 servings. Thanks for the great recipe!

Sugar Free Sour Cream Linzer Cookies

Reviewed: Jan. 3, 2008
I made these with Splenda and splenda sweetened raspberry preserves for my diabetic uncle. He went crazy! We could barely keep everyone else from eating them. I used a little less Splenda because it is extra sweet and we didn't notice a funky aftertaste after the cookies were baked. Thanks a million-especially from my uncle!

Garlic Prime Rib

Reviewed: Jan. 28, 2008
Rave reviews all around the table! I did a 4.25lb cut so I cut the rub amount in half but did let it sit at room temp (cool house) for two and a half hours with the rub. The crust made by the hot oven was amazing! After 15 min at 475 degrees, I cooked it for another 35 minutes at 325, took it out and let it sit for another 15 minutes. Perfect medium rare! I'll never use another recipe again.

Hawaiian Banana Nut Bread

Reviewed: Feb. 8, 2008
WOW! Didn't have cherries but still THE BEST flavor-even after subbing 1/2 c oat bran and 1.5 c whole wheat flour for 2 of the 3 cups of flour. Also mixed 1 C Splenda, 1/2 C brown and 1/2 C white sugar and toasted coconut. We made these in the heart shaped disposable tins and baked at 350 for 11 minutes-perfect. Great healthy alternative to Valentine Sugar Cookies!

Banana Bran Muffins

Reviewed: Sep. 20, 2007
After combining much advice from other reviews, I substituted lowfat vanilla yogurt for the butter, added 1/3 c flax meal and replaced half the flour w/whole wheat flour. A few added walnuts and chocolate chips didn't hurt either! These were gone in a day and my sister, who despises any health food substitutions, begged for the recipe. Even my 5 year old critic chowed down on 4 mini muffins after school.

Easiest Focaccia Recipe

Reviewed: Feb. 12, 2008
This was great! With the addition of the suggested minced garlic, salt, basil and rosemary to the dough...... I then topped with olive oil that had been warmed with more of the herbs and garlic, spread on with a pastry brush and sprinkled with mozzarella, parmesean and kosher salt. I didn't use a bread machine or mixer-a wooden spoon worked just fine. My 3 year old polished off 2 pieces before the pan had even cooled off! Definitely better than what I can get at any store around here!

Restaurant-Style Coleslaw I

Reviewed: Sep. 13, 2007
I also used the vinegar/milk trick since I didn't have buttermilk. My finicky husband said it was the best coleslaw he ever had!

Garlic Feta Dip

Reviewed: Sep. 13, 2007
My husband would eat this with a spoon if we let him! Great on veggies, pita wedges and my favorite- spread on sliced grilled ciabatta with a fresh tomato slice on top. Also great in place of mayo on a sandwich........

Rosemary Lemon Grilled Chicken

Reviewed: Sep. 13, 2007
Following the others advice, I used 2 tablespoons of melted I Cannot Believe It's Not Butter and the remaining amount in olive oil. Also marinated breasts, wings and boneless skinless thighs for 2 hours-maybe best chicken we ever had!! Way better than same name dish from caterer in New York last week.

Actually Delicious Turkey Burgers

Reviewed: Feb. 4, 2008
These are great with the recommendations suggested. I added the worchestershire, some Country Bobs Sauce, Lawry's garlic salt and the whole egg. When we make broiled tiny little patties my kids eat them as chicken nuggets-much healthier though :)
