Easy Sour Cream Cheesecake

The perfect texture and so much easier to make than conventional cheesecakes. Added a tablespoon of lemon juice (We like our cheesecake less sweet). Crushed up graham crackers and some melted butter for a crust. Baked in a 9 inch silicone pan for the time stated in a water bath. Came out perfect and creamy. Will make again!

Cream Cheese Pound Cake III

Velvety texture and perfect density! I've tried other pound cake recipes from allrecipes but this is hands down the best. Made a few modifications: two teaspoons of grated lemon peel for a nice subtle lemon flavor. (And don't grate the white of rind ladies just the yellow) and upped the vanilla to one teaspoon. Will make again tomorrow since half of it is already gone!

Tiramisu Layer Cake

Used french vanilla cake mix. Baked this twice. The first time, I doubled both the liquor and coffee and found the extra Kahlua overwhelming. Used the frosting recipe but couldn't get it stiff. Added more confectioner's sugar but consequently, the frosting was way too sweet. So for the second tiramisu, I only doubled the coffee and used the delicious filling for the frosting instead. Topped with cocoa powder and chocolate curls.

Garlic Butter

Wasn't bad, pretty much the typical garlic bread recipe but a little on the salty side so I cut down the salt by half (you can put more salt according to your own taste) and popped it in the broiler. As long as you cut down on the salt, it's delicious.

Blueberry Coffee Cake I

Instead of using a bundt pan, I opted for a 9 inch spring foam pan. And as other reviewers suggested, halfed the streusel recipe and used 3/4 cups of milk. My streusel didn't turn out "crumbly" initially (despite the fact I used stick butter), so I added a little more flour and brown sugar till it was. The streusel was a little crunchy but worked great with the softness of the cake. Also, used frozen blackberries instead and it turned out wonderful. Will make again!

Garlic Prime Rib

I was hesitant too but after reading all the reviews, I decided to give it a try anyways. I made this last night for Christmas dinner and it came out PERFECT. Used the same amount of rub for a 7 1/2 pound rib eye roast with the bone in. Followed the recipe but needed an additional 40 minutes for the internal temp to reach 135. Pulled it out and let it rest for 30 minutes. It was the perfect medium rare. Absolutely wonderful!

Awesome Broccoli-Cheese Casserole

What good comfort food should be. Had it for Thanksgiving and the kids devoured it. Made a few modifications though. Used broccoli soup, instead of mushroom. Used four cups of fresh broccoli. Added 1/2 cup more of sharp cheddar. Used only 1/2 a cup of mayo and omitted the extra salt. Topped with onion straws and some bacon. The consistency was more like a quiche but delicious nonetheless. Definite crowd pleaser!

Rempel Family Meatloaf

Delicious! I hate the grease leftover though so instead of putting it in a loaf pan, I form the loaf and place it in a 9 x 13 pan. The cheese burns but it beats eating all that grease. Also, during the last 15 minutes, I add a glaze: 3 tbsp ketchup, 1 tbsp A1, and just a splash of tabasco. We love the little kick it adds!

Ultimate Twice Baked Potatoes

Instead of baking the potatoes, I poke holes into the potatoes and stick them in the microwave instead. Cuts down on time and the potatoes come out just fine. Also, I broil the potatoes for the last 5 minutes they're in the oven, makes the cheese nice and bubbly. Topped off with chives instead of green onions. Delicious.

Super Sausage Gravy

Just like grandmamma used to make! Used maple sausage. We like ours with a little kick so I added just a 1/4 teaspoon of crushed red pepper. Absolutely perfect.

Best Big, Fat, Chewy Chocolate Chip Cookie

Just like the name says, they're the best big fat chewy chocolate chip cookies. Tasted better than from a bakery! My mother loved them. Did NOT get hard the next day. Next time, I will reduce the amount of white sugar to a 1/4 a cup. Will make again soon!

Best Carrot Cake Ever

It really is the best carrot cake EVER. I've tried several other recipes and this one is the best. Cut the recipe in half and made 18 cupcakes. The carrots do take a little time to grate (used a cheese grater) but asides from that, it was a simple recipe. I read some of the other reviews and I couldn't figure out what to strain. In the end, I strained the pineapples but not the carrots. Substituted pecans for walnuts and added 1/2 teaspoon of allspice. Used Cream Cheese Frosting II to finish it off. Absolutely delicious and moist!! Lasted a single day at our house!
