Kris' Lentil Sausage Soup

Made this last week and thought it was great. I used Hillshire Farms Smoked Sausage and browned it, sliced, with the vegetables, thereby, omitting the oil. Also used homemade vegetable stock in place of chicken broth. Next time I'll add a box of chopped spinach! Served this over brown rice. Really delicious. Thank you, Kris : )

Omit the ketchup and substitute tomato sauce for ketchup (do this with everything involving ketchup to avoid 'high fructose' corn syrup) and you have a winner!

Baked Apricot Chicken

Made this when we hosted another couple for an evening of cards. Used 4 drumsticks and 4 thighs and subbed 1 cup chopped onion for the onion soup (cuts down on the salt and the sugar as well). Covered it the first 30 minutes of baking to keep the preserves from burning. Served with brown rice and broccoli.

Beef and Walnut Stew

This recipe is WONDERFUL! The peppers may disintegrate (I made it twice...red peppers pretty much melted, green peppers held shape) but it doesn't change the great flavor of the recipe! 2lbs of chuck steak does not seem excessive to me (as noted by another reviewer) considering the recipe is for EIGHT servings.
