Gingery Carrot Salad

Really good recipe. I recommend going ahead and cooking the carrots-- I've had this before where the carrots are fresh and there's something nice about having them slightly softer (only slightly-- 2 minutes was perfect). I added raisins and cashews, as well as cilantro and green onion. I didn't have cider vinegar so substitutes rice wine vinegar which turned out great.

Roasted Beets with Feta

Blueberry Gingerbread

This was really good, despite my trepidation about combining blueberries and gingerbread. It was really tasty. It didn't look that great because it was SUPER moist (maybe add more flour) and sort of fell apart, but people raved about it. Next time I was thinking I might use cherries instead of blueberries-- for some reason that makes more sense to me. Try the Boscobel Ginger Cake-- that's an amazing ginger dessert recipe.

Whole Wheat Zucchini Herb Bread

This was really good-- thank you to the previous reviewer who gave instructions on how to do it "old fashioned" style! It *is* a little on the crumbly side on the crust, at least; also, it wasn't the prettiest top I've seen. I did brush with olive oil afterwards-- next time I might try sprinkling with parm cheese at the end of the baking process. But yeah, good bread!

Boscobel Beach Ginger Cake

Fantastic! I brought this cake to a party and had two people come up to me three times to rave about it. A bunch of people said "Hey, you're the one who made that cake, right?" The cake texture is really perfect-- and that was even after I forgot to cream the butter and sugar together (instead I put the sugar in with the dry ingredients, and had to take a chance and bake the thing without the butter being properly distributed. Definitely will become a regular feature in my baking! Oh-- I did ice it with a simple confectioner's sugar / vanilla / milk blend, and then topped it with dusted sugar. I'd definitely recommend some kind of simple icing to sweeten it up.

Vietnamese Fresh Spring Rolls

Really good! I didn't know how to roll them so that took a little practice-- and I made the mistake of cutting out the vermicelli noodles (trying to cut my starch intake) so they were to vegetable-y. but if i hadn't done that these would be great. i added chopped cashews into the sauce and added soy sauce, just a touch. didn't use fish sauce so it was totally vegan. we were amazed at how good the sauce was!

Amazing Simple Thai Tofu

This was pretty bland, I have to say-- I added lots of stuff because of the other reviews, put in cilantro, basil, extra garlic and ginger and coconut milk. I think it might be good if you spice it up a bit with some thai chili sauce, and halve the amount of tofu though.
