Indian-Spiced Roasted Chickpeas
The spice flavor was very good, but I didn't like the texture. They weren't like a crunchy snack . . more of just a dry mealy (?) kind of thing. I ended up trying to pan fry them after the roasting to get more of a crispy/crunchy feel. After frying I tossed them with more spice, brown sugar and salt to add back flavor. It helped a bit and we still ate them, but I probably won't make it again.

Chocolate Coconut Bars
Something this easy shouldn't taste this good. I realized at the last minute I needed to bring a holiday treat to someone and it came out so good that I almost kept it all for myself. (I did keep some.) Definitely be making this again!

Chicken and Corn Chili
So good you'd never know it was so easy! Be sure that you pick a good salsa to use. I usually have all the ingredients on hand since I usually have a bag of frozen chicken breasts so it's a good "go to" meal when I don't know what else to make. Leftovers make great burritos or quesidillas.
