Chicken Scampi II

Reviewed: Aug. 10, 2008
Very good chicken scampi recipe. I took the advice of others and made the following changes: coated the chicken with flour, added an extra clove of garlic, 2 tablespoons of lemon juice, 1/2 white wine, small sliced tomato. This was better the second time when I added a small sliced onion. Enjoy!

Zucchini Herb Casserole

Reviewed: Aug. 4, 2008
This was better than I thought it would be given some of the comments I read. I took the advice of various others and made some changes to the recipe. I used 1/2 cup raw brown rice to start. I also doubled up on the the spices except for the garlic salt. I used 1/2 cup chopped onion and Italian Bread crumbs. I also cut the Cheddar cheese to 1 cup. There was nothing left for lunch the next day! Great summer time recipe!

Slow Cooker Pulled Pork

Reviewed: Jun. 7, 2008
This is very good. I tried it with a store bought BBQ sauce that was on sale not what I usually use. I will make again with my regular BBQ sauce and see if I would then give it 5 stars.

Super-Delicious Zuppa Toscana

Reviewed: Jun. 5, 2008
Outstanding recipe! I was hunting for another recipe and came across this one. It just so happened that I had everything I needed on hand so I decided to make this recipe instead. The Kale worked well in the soup. I did cut back on the red pepper flakes to 3/4 tsp for the kids sake but it was still very good. Only mistake was not having French Bread on hand to go with the soup. Next time!

Skillet Ham, Cabbage and Potatoes

Reviewed: Apr. 14, 2008
I read the reviews of others and based on their experience I made the following changes to the recipe: I substituted 1 tablespoon bacon grease in place of margarine, used 3/4 cup chicken broth in stead of water, sliced up 1 lb. Kielbasa instead of 2 cups diced ham. I also added 1/2 teaspoon whole caraway seeds for a slight nutty flavor instead of a spicy flavor as others have done. I no leftovers for the next day from this meal.

Yes it was very good! Yes, I used 3 shots of espresso instead of the coffee. Yes, I gained 3 pounds before it was finished. Must have been that Easter ham!

Slow Cooked Corned Beef for Sandwiches

Reviewed: Mar. 13, 2008
Very good but I only used one 3.8 lb brisket and I was late getting home from work so it cooked for almost 12 hours in my cockpot. Will follow the recipe to the letter next time.

Yakisoba Chicken

Reviewed: Mar. 13, 2008
This was very good and I will make it again. I cut back on the chili paste by 1/2 tablespoon fearing that it might be too hot for my taste (as others have stated). I thought the spice level was perfect using that measurement. Other than that I followed the recipe to the letter. I think I might have had too much cabbage and not enough chicken. I will adjust the next time.

Garlic Broccoli

Reviewed: Jan. 25, 2008
I thought the garlic was somewhat over powering. I will cut the garlic used down until I find the amount I like. Overall its easy to make and different from the usual salad.

Butternut Squash Soup

Reviewed: Dec. 27, 2007
I made this Butternut Squash Soup for our Christmas dinner. I took the advice of various others: I cut the squash in in half and put each half in the microwave for 10 minutes then scooped it out. This proved to be very easy and took much less time. I also reduced the cream cheese by half, using only one 8 oz container. I also used 4 cups of chicken broth from a can instead of 3. Everyone loved it, even the kids ate multiple helpings after they got past the color. I think the cayenne pepper is very important to this recipe. It gives it that special something that just makes the soup. Will make this again and soon!

We enjoyed this recipe but to be honest I have other shrimp recipes which are just as easy to make but are more flavorful. I would make again as part of a theme meal.

This recipe is very easy to make before going to work. I served it over noodles and added a 4 oz can of mushrooms (drained) and 2 tablespoons of sour cream 30 minutes before serving. Everyone loved it!

Marie's Easy Slow Cooker Pot Roast

Reviewed: Nov. 2, 2007
You know you have a recipe to keep when my 13 year old son (who thinks eating supper is an annoyance because it takes away from more important things like video games) requests seconds and says: "this is really good".
