Wonderful dish! I added potatoes and diced zucchini and everyone loved it. Next time I will make red rice to go with it, for all the wonderful sauce.

Home-style Tacos al Pastor (Chile and Pineapple Pork Tacos)

This was very good the first day, but amazing the following day! I put the whole recipe in my crock pot without marinating, cooked on low all day, and made al pastor burritos the first night. The meat was quite tender and delicious, but I knew marinating would have given it more depth. Taco's the next day were great, and the third day I just ate it straight- yummy! I did change the pineapple ratio as I don't care for sweet meat. The first day it was sweet, but the second day it had balanced, and the third day it was spicy!

Thai Grilled Beef Salad

Loved this! It slightly salty, but the fish sauce is adjustable, so add that to taste. I did not have time to make the kecap manis and will do so for next time, as I am sure that will influence the salt. I put the whole thing over a bed of romaine, and it was terrific. My whole family loved it! I have two picky eaters who loved the meat in particular.

Fettuccini Carbonara

Delicious! I had fat free Half & Half, which worked well. I heated it in a bowl sitting on the water heating for pasta. When the pasta water was ready, I removed the bowl from over the water and added the pasta to the water. While that was cooking I tempered the yolks, added the cheese to the FF Half & Half, and stirred in the yolks right as the pasta was cooked. So simple and delicious.

Arugula, Fennel, and Orange Salad

This is a great combination for arugula, with no changes. However, I found it a trifle light on flavor, as I tend to favor contrasts. I added double lemon juice into the dressing, as well as the spicy walnuts from Trader Joe's into the salad. YUMMY!

Creamy Cilantro Chicken with a Kick

We enjoyed this dish. I try not to change recipes on the first try but sometimes ingredients or preferences interfere. My biggest problems with almost all recipes is they do not have veggies in them. So, to incorporate some summer squash, and also because once long ago I was a saute cook in NY, I made some small changes. First I sauteed summer squash in olive oil with onions (4 saucer squash and 1/3 of an onion) in olive oil after dusting with flour to coat. Browned a little, then removed from heat and spread on half cookie sheet, placed in oven which was hot from another dish, but now turned off. Added more oil to skillet, and then sauteed chicken with all marinade, covering for a bit to steam the chicken. When sauce was reduced to a thick sauce, mixed in warm squash and onions. Plated chicken pieces with leftover rice and arugula covered with sauce (always double sauce- you will never regret it!), along with a warm white bean balsamic salad. It was very tasty! Next time I will add a little salt, and a little lime juice at the end of the reduction.
