Hi, I'm Lauren, a student who really enjoys cooking. I work in the kitchen at Spoleto restaurant, but I have more fun with the cooking that I do on my own time. Most of it is terribly unhealthy, (cookies, cupcakes, brownies, candy...) so I make a lot of friends sharing it. haha...but I also do enjoy finding healthier alternatives to those treats.
My favorite things to cook
anything with chocolate and peanut butter (alone or in combination), pesto!
My cooking triumphs
I once made a key lime cheesecake for my mom for mother's day, and anyone who has ever worked with key limes before can attest to how horribly painstaking it is to zest and juice them, being so small. After hours of work though, I had made the most delicious cheesecake that anyone in my family had ever tasted. The next time I made it, I used regular limes (just as good)
I also made a lemon raspberry wedding cake with lemon curd buttercream that I made for my boyfriend's graduation. It was absolutely beautiful, and tasted great. Everyone was impressed.
Lastly, the first time I made spring rolls. Although it took a LONG time preparing and wrapping all of the herbs, vegetables, and peanut sauce by myself, it ended up being one of the most well-recieved things that I have made.
My cooking tragedies
I was making a batch of chocolate chip cookies while very distracted, and to make matters more difficult, I was either doubling or halfing the recipe (I can't remember which). well, after two minutes of being in the oven the cookie sheet was just a puddle of melty cookie mess - I had put too much butter and not enough flour! I had to scoop the liquidy mass back into the mixing bowl and add flour until it was a normal consistency again, which would have been fine but the chocolate chips were all melted! In the end, I ended up with a batch of chocolate white chocolate chip cookies - not what I had expected.
