Homesteader Cornbread

Reviewed: Oct. 19, 2012
Good basic cornbread recipe. Substituted soy milk and came out just fine. Might up the sugar by 1/4 cup next time for a slightly sweeter flavor.

Pesto

DELICIOUS! We loved this. However, the garlic was very dominating...maybe I'll cut back by a clove or two next time...

Potato Chips

Reviewed: Apr. 24, 2011
Turned out delicious but needed a LOT longer than 3-5 minutes in my microwave...try 15-20! And it's a new microwave. Maybe next time I'll try making these in the oven instead. Used a mandoline slicer to make the slices extra thin, worked like a charm!

Flourless Chocolate Cake II

Reviewed: Apr. 21, 2011
WOW. This cake is AMAZING!!! Good solution for my Passover chocolate craving. I think it needed about another 7-10 minutes in my oven, and I would just oil the pan next time (no cocoa) as it didn't come out as easily as I liked. But it was so fudgy, so chocolatey, so delicious!!!

Outrageous Chocolate Chip Cookies

DELICIOUS!!!! So so yummy. I got exactly 3 dozen out of this, and they are scrumptious!! I used milk and peanut butter chips and they were great!

Chocolate Covered Strawberries

Reviewed: Jan. 28, 2011
Absolutely delicious and so easy! I cut out the shortening all together, it was completely unnecessary. I rolled some of the dipped berries in sprinkles and some in ground nuts! YUM!!

Parmesan Knots

Reviewed: Jan. 18, 2011
AMAZING!!! Absolutely delicious!! I only made one package worth of biscuits (which made 16 knots). I did opt for olive oil rather than butter like other reviewers suggested, and I thought they were magnificent as is. This will be my new go-to recipe for dinner rolls!!!

Butternut Squash Soup II

Reviewed: Jan. 17, 2011
WOW! This soup is incredible. I listened to other reviewers, and cooked the squash in the oven at 400 for an hour, which did make the peeling/seeding easy. The only other adjustments I made were substituting a sweet potato for the regular potatoes and a non-dairy margarine for the butter. I was a little worried, as the chicken smell was very strong while the soup was cooking, and I was nervous the soup would end up tasting like a veggie-chicken soup. But luckily I was wrong! The smell cleared afterwards and no chicken taste. Five stars all the way, I will definitely be making this again!!!

Pumpkin Chocolate Chip Cookies III

Reviewed: Nov. 7, 2009
DELICIOUS!!! These were absolutely amazing!!! I only made a couple tiny alterations - used pumpkin pie spice in place of the cinnamon and omitted the walnuts (don't need no nuts getting in the way of my chocolate!) :) My yield was more like 3.5 dozen rather than 2...

Easy Morning Glory Muffins

Reviewed: Oct. 4, 2009
These muffins were delicious, but I did make a heapload of changes to them! No disrespect to Debbie... I used half whole wheat flour and half all purpose; I exchanged half of the oil for applesauce, and replaced the coconut (which I really dislike) with oats. On top, I sprinkled a cinnamon crumb topping, leftover from a pie I had made last week. I know that the crumb topping isn't necessarily healthy at all, but I thought it added a nice sweet touch :) I used my food processor to chop up the apples and carrots: I only had baby carrot, so in case you're wondering - 20 baby carrots roughly equal 2 cups of shredded carrots, and two small granny smith apples were used in place of a large one. These muffins are delicious, and you feel good about yourself when you eat them!

Marshmallow Fondant

Reviewed: Jul. 22, 2009
This recipe is easy and not too messy. I take away a star because no matter how much confectioners sugar I used - the fondant was just too sticky. I ended up running out to the store to buy fondant, which was much easier to work with, but a lot less tasty...

Chocolate Pretzel Rings

Reviewed: May 18, 2009
This recipe was awesome!!! I couldn't find pretzel rings so used the regular ones, Hershey's hugs and dark chocolate M&M's. They came out delicious. So easy and takes no time to make.

Chocolate Oatmeal Cookies

Reviewed: Oct. 15, 2008
I found I had to add another egg to the batter; even before I added the oats, it seemed like the batter was too dry. Something's missing, I don't know what... After reading other reviewers' comments, I omitted the chocolate chips and instead added a handful of raisins. Maybe I'll dust with icing sugar.

Emily's Famous Apple Pie

Reviewed: Oct. 10, 2008
I made a lot of changes to this recipe... I have made many pies in the past and found that i prefer a more moist filling; I substituted 2/3 cup white sugar with 1/3 brown and 1/3 white (love the flavor of brown sugar and apples), didn't have any spices except cinnamon (new apartment), and added two eggs to the filling mixture. I made a lattice top and brushed it with egg, then sprinkled it with coarse sugar. I also found that with my pie dish, I used about 4 apples (my pie dish is a little smaller, though...) I used Mollie Katzen's pie crust recipe; it's really easy, you can find it in the recipe section of her site (substituted the butter for margarine to make the pie parve). It was delicious!!!

Clone of a Cinnabon

Reviewed: Oct. 2, 2008
Some things seemed a little odd with the directions in this recipe...first of all, it seemed that spreading the dough to 16X21 inches was too thin and too big... Second, I thought that the glaze recipe required too much powdered sugar -- I used just about half of the recommended amount, and it was still really sweet! In any case they look yummy, and I can't wait to dig in...

Fluffy Whole Wheat Biscuits

Reviewed: Sep. 27, 2008
This recipe was delicious!! I didn't have any whole wheat flour, so I substituted it for whole rye; I also don't own a biscuit cutter, so I used a cookie cutter - they came out amazing! Took 10 minutes to make. Goes great with French cheese.

Oatmeal MM Cookies

Reviewed: Aug. 1, 2007
This was a great recipe!! However, the yield is kind of small. I would try doubling it next time. 2 dozen may sound like a lot, but once you start eating these you can't stop!! :) I made a few changes, because I live abroad and not all of the ingredients are available; I used butter instead of shortening, and because I only have one bag of miniature M&Ms and didn't want to use them all up, I used 1/2 cup M&Ms and 1/2 cup chocolate chip cookies. They turned out GREAT!!
