Stuffed Eggplant with Shrimp and Basil

Made this exactly to recipe last night (with fresh eggplant and basil from our garden), and it was quite good. For our taste, next time I will make it with more shrimp and less breadcrumbs (1/4 - 1/2 c). May also put fresh Romano or Mozzarella on top rather than parm. A great dish and a great use for fresh eggplant. Will make again! This dish pairs well with a light white wine and a small salad.

Ricotta Stuffed Zucchini

This was a great way to serve fresh zucchini. The lemon and basil gave this dish a light, fresh taste. My chagnes: Per other reviewers, I added 1/2 tsp of minced garlic. I also added a dash of Italian seasoning to each zucchini half along with the salt & pepper. I added Italian bread crumbs to half the recipe just to see how it would be--good either way. A keeper!

Chicken Fried Chicken

Made this recipe exactly as instructed--wow. I grew up eating southern fried chicken, so I know what I am talking about when I say this recipe was one of the best for fried chicken I have tasted ... and the fam agrees. The crunch of the breading was perfect. I have a deep fryer, making it easier to keep the oil at a constant temp--hot oil is a must; keep in mind if you are skillet-frying, and don't overload the skillet. This meal is excellent with mashed potatoes and a green veggie. Thanks, CASSJW.

Great recipe, thanks, Kelly. Made it exactly to the recipe, and it was delicious. Next time will substitute diced celery for the almonds (family preference; if you like almonds, by all means use them). An easy-to-make, comfort-food dish we will make again.

One thing I would recommend, with the amounts listed, you may want to buy two cans of crescent rolls and make two braids--we had filling left over. An easy-to-make, comfort-food dish we will make again.

Chicken Tetrazzini

The entire family loved this one. Fast, easy, and quite delicious. The only change I made: I had no half-n-half, so I used an equivalent amount of sour cream. Pair with a salad and garlic bread for a great easy meal.

Russian Mushroom and Potato Soup
