Chiles Rellenos Pie

YUM! Only used about 1 cup of salsa since more would not fit in my dish and I think that was all it needed. Broiled the chiles for about 10 minutes, turning peppers about every 2 mins, then placed in a paper bag for about 10 more minutes, skins peeled off very easily. Next time I will remove the seeds before roasting and add more chicken. I hope it is as good tomorrow as leftovers!

Harvest Pumpkin Cupcakes

Pie Crust III

I'm not usually a huge fan of pie crust because it is dry, but this was perfect and so simple to make. I also added 1 Tbsp of sugar. The recipe as is does not make 2 pie crusts. If you want 2, make 1 1/2 of the recipe.

White Bean Chicken Chili

YUMM!! This is amazing!! Couldn't find tomatillos so I used an 18oz jar of Archer Farms salsa verde. Used a fresh jalapeno instead of a can of chiles. Used frozen corn instead of fresh. Added about 1 1/2 tbsp of cornstarch mixed with 1/4 cup of cream at the end to thicken it up. This is SO good!

Frank's® Red Hot® Buffalo Chicken Dip

THIS IS AMAZING! What is even more amazing that I just learned that you can make this in a crock pot! It takes about an hour or so, but it's a great way to keep it warm for awhile and if you need time to prepare other things. When this is made for a cook out, I love to put it on my burger!

Sweet and Sour Kielbasa

Super easy and delicious! Made exactly as is, the sauce is excellent! This is the way I've always made it, didn't think it was too ketchupy at all. This recipe makes A LOT of sauce, I made 2 lbs of kielbasa and it was good, probably would've been fine with 3 lbs. Next time I'm going to try using lil smokies and it will make it even easier! This went over very well at my potluck!

Crusted Salmon with Honey-Mustard Sauce

Salmon is one of my favorite sushi, but I've had it grilled, smoked, baked from restaurants and didn't really care for it until this recipe! So quick and super easy! I found that I had to cook it for about 25-30 mins, but my pieces were thicker. You need a lot more than just 1/4 c bread crumbs, but that's not a big deal. One time I didn't have honey so I substituted brown sugar and I think it came out even better! I'm making this AGAIN tonite. YUM YUM YUM!!

Original Chex® Party Mix

A family favorite around the holidays. I have never used the microwaved version, I spread on a cookie sheet and bake at 350 for about 45 mins to an hour (or when crisped enough for my liking) turning every 20 mins or so.

Cheesy Hash Brown Bake

I've made this over and over and over again and it is ALWAYS a hit! I've added onions, peppers, ham, bacon. When I can't find cream of potato, I've used cream of broccoli or cream of mushroom and it still tastes the same.

Garden Salsa

Excellent recipe! I sauteed the onion because I don't like uncooked onions and I added a hot banana pepper for spice, should have added more hot peppers because I like a hot salsa.

Slow-Cooked Chili

I doubled the amount of tomato sauce and it was still fairly dry so I added another can. I also used diced tomatoes w/green chilies to make it a little more spicy. Other than that, this recipe was delicious!! I can't wait to have leftovers!

Bourbon Whiskey BBQ Sauce

Didn't care for this too much. It was very "chunky" with onions and garlic. There was no way you could have strained it like it says at the end of the recipe. I saved myself some trouble by using the already minced garlic in a jar instead of chopping it up myself. I'm sure if I had a food processor that would have been helpful too.

Blooming Onion and Dipping Sauce

I tried making the blooming onion, but when I dipped it into the dry mixture the onion didn't fully get covered...it was a disaster. I tried the recipe again, cutting the onion into rings and it worked MUCH better and was ten times easier. Also, I only dipped it in the wet mixture once because when I did it a second time, all of the dry mixture came off. Its also easier to coat onions by putting them into a ziplock bag with the dry mix and shaking it. Very delicious recipe, next time I might add more cayenne to make it spicier.
