Whipped Cream Filling

I used this to top my key lime pie, and it held up great for several days. I did this through a piping bag without any problems. I would also recommend increasing the powdered sugar. One word of caution is when buying the cream; I first bought ultra-pasteurized heavy whipping cream and it would not whip. The second time I bought just regular heavy cream and it was perfect. I did some research online and multiple sites state not to buy ultra-pasteurized as this causes the cream to lose the ability to whip.

Chocolate Covered Strawberries

Excellent recipe! This is the second time I have made these, and the first time they were a huge hit. I have used a pyrex dish over a pot with boiling water as a makeshift double boiler, and it was worked just fine. For anyone making them the first time, white chocolate is a bit more difficult to melt than the milk chocolate, and you may need to add a tiny bit more shortening. Also, the first time I made these I used Ghirardelli chocolate chips (white/milk). The second time I used IGA milk chocolate chips...huge difference! Although they set, the chocolate did not set as well. Spend the few extra dollars and buy the better brand chocolate...its worth it in the end!

Strawberry/Rhubarb Crumb Pie

Very good recipe! The pie did come out delicious, and I got very good reviews from all that tried. The pie did not come out runny and was certaintly a hit! I did cut back the sugar to 1/2 cup (this was still plenty sweet...1 cup would be way too much in my opinion) and added 1 tbsp cornstarch which I believe helped prevent the pie from being runny. The only negative I have is that the general appearance of the filling was a bit opaque, which is most likely from the cornstarch/flour combo...maybe next time I will try cutting back on the flour. However, this did not affect the taste at all! Highly recommended recipie, but do consider the changes I have listed as well as others!
