World's Greatest Vegetable Broth

This is fantastic! Roasting the vegetables makes the broth so rich it's hard to believe it's vegetable broth. I must remember to make the batches huge so I can freeze for later use since I cannot abide store bought veggie broth after making this. Thanks for sharing this recipe!

Barley Bake

I like the fact that this recipe woke me up to the idea of using barley as a delicious side dish. I thought that cooking it on the stove top would have provided just as much flavor and would have used much less energy than the long time it took to bake it. Also, I will start toasting the pine nuts before I put the barley in the pan to toast. Putting them in at the same time as the barley didn't give them enough time to get nicely browned.

Veggie Pot Pie

Absolutely delicious and easy to make! I change out the veggies and sometimes use chicken broth and add chicken. It's always great! Don't leave out the cauliflower! Besides being healthy, it is particularly yummy in this recipe.

Homemade Black Bean Veggie Burgers

Yum! I forgot to drain and strain and just added breadcrumbs until the mixture held together. I coated both sides with olive oil and grilled on aluminum foil. No more frozen veggie burgers at our house! Thanks!

Pork Roast with Thyme

This recipe made a fabulous-tasting, juicy roast. Don't be alarmed at the smell of vinegar when you first put the roast in the oven. It dissipates after 30-40 minutes. Thanks so much, this recipe is delicious!

Perfect Turkey

I purchased a cooler specifically for brining the turkey since I don't have a pot large enough nor do I have room in the fridge. In Colorado it's cool enough that I can set the cooler outside overnight and usually into the next morning till I'm ready to cook the bird. Brining the turkey makes a HUGE difference in moistness!

Roast Sticky Chicken-Rotisserie Style

I've made this twice. The first time I rubbed the spice mixture on and let it sit in the fridge overnight. It was amazing. The second time I forgot to rub the mixture on until just before I put the bird in the oven. It was still great but just a little drier than when it had sat overnight with the spices.

Mexican Zucchini Cheese Soup

I agree with the last rating. I'm giving it 5 stars for the basic recipe. I'm not a fan of canned veggies so I used two ears of grilled corn, and fresh peppers and tomatoes from the garden. While we were eating my husband suggested we try potatoes instead of squash for a hearty winter meal. I'll bet there are other combinations people will come up with using this excellent recipe. Thanks for sharing!

My Own Salad Dressing

I've become a huge fan of homemade salad dressing. This one is tasty! You can change the type of vinegar (try balsamic, rice wine, or other vinegars) for a different flavor. Sometimes I add a little lemon juice as well. You can also change the herbs and spices. Dried dill is very good and if you've got fresh herbs they can be minced and thrown in.

Garlic Chicken

Warming the olive oil and garlice really brought out the flavors. Yum! I used Panko bread crumbs for more crunch and baked the chicken on a rack in a baking pan to help crisp the bottom. This is delicious!

Easy Stovetop Peach Cobbler

Great recipe when the peaches are ripe and the weather's hot so you don't want to use the oven! Beware! 9 oz. of cake mix is 1/2 the standard box usually sold. I almost made the mistake of adding the whole box. I used fresh peaches, added 1/2 cup fresh orange juice and sprinkled it with only 2 Tbs. sugar. Next I'll add some blueberries. Can't wait to try it with apples when they're ripe this fall! Very yummy!

Summer Feta Burger with Gourmet Cheese Spread

These burgers are fabulous! I accidentally bought ground pork instead of pork sausage and it tasted great. I also haven't cooked the garlic and onion, just added them it. Still tasted great! The key is not overworking the mixture and forming the burgers loosely. Wow! Thanks for a great way to pep up our summer!
